    Avacados

    Once n a while The Rim Ping Market up here has imported, Haas Avacados, hard rarely dark. But this weekend they had a few that had that near black skin with a just a hint of softness. Now I ain't had an avacado in 'bout a year, so I bought me one the other day it was 60 baht, small.


    Set it up on top the refer to ripen up for a day or two. It was just soft enough today. Thought I'd make up some guacamole, while cruising the other Rim Ping out by CMN's house, I spied some more seriously ripe, dark, almost purple "Avacado Thai." These guys were 65 baht a kilo!
    Bought me a few. Gonna be eatin avacodos for a while.
    But tonight I'm gonna have about three avacaods worth of Guacamole
    Now, there's more recipes for guacamole out there than you can shake a stick at. So I'm gonna help y'all out with the REAL DEAL.
    You're gonna need


    That's Cilantro, (the juice from) two limes (or so) some fresh oregano; the dry shit just wouldn't do with all these fresh ingredients, if I didn't have fresh I would of just shined that on. Avacados and of course some chilies. Not pictured is the jar of ground cumin, I like to add a heavy-handed dash of that as well

    Slice around the seed of your avacados length-wise and twist. You'll get one half with the pit still. No sense diggin' around tryin to dig that fucker out. Just chop into the pt with your knife:

    And twist the thing out.

    Scoop all the meat out into a bowl,
    Finely chop the herbs and chilies. Make sure you get it all diced up nice and fine. You wanna make sure each bite has it's fair share


    Dump all that in an over sized bowl


    Add enough lime juice to make the mash thick not wet, mash it all up.
    You should be able to mash every thing just fine with the back of spoon it's alright if the mash is a bit coarse.
    When you're done it should look somethin' like this:


    Great right from the spoon or on chips, makes a decent snadwich spread. Tonight I had a pile of wings, I used 'em as an edible scoop & pigged out. the ol' lady thought it was "pet mak" so I had the whole bowl to myself, gee funny how that worked out

    Hmm, got some naam nthe freezer, cook 'em up in oven and dipped in the suace....
    nah. the guacamole won't last til tomorrow.

    Fingernails tell a lot about a person.

    Good cheese and avocados are the top two things I miss.

    I used to go to the market in Adelaide on a Saturday aftenoon around closing time and I could buy a tray of 40 for about $A1. (I kept bandicoots and a few other marsupials. They loved the avocados)

    Made a lot of guacamole myself.

    The missus loves em more than me.She just puts a bit of lemon juice, salt pepper and some garlic and eats it on toast.

    Back in NZ, my uncle had about 2 acres of Hass avos.Whenever we came back from his place with a big bag of the buggers,(In the car) the wife used to peel them and eat like 'em like an apple!!! FFS!

    My avocado tree in the front yard is 4 meters tall and counting. About 2 more years!! Grew it from the seed I did.

    It's just not guacamole if it doesn't have tomatoes and onions in it (basically avo's and salsa). But that does look good, none-the-less. Especially with all of those chilies!

    Thats my style too Billy. Add some onions and garlic of my own, a bit of cilatro, and in goes my salsa, or the best I can buy. Damn hard to buy a good salsa here so I make my own. Old Wally claims its the best he has ever had.
    Now I am gonna have to cook TexMex again!

    Many years ago I was married to a Nicaraguan woman who made guacamole exactly as described by frankie. The only slight variation: if the avocados were not quite ripe enough she'd put in just a tad of milk.

    Of course, imagine her horror when we visited a friend who had recently moved to California from New Jersey. When we arrived his kids were having baseball batting practice with the strange green fruit that grew on a tree in their side yard. They had no idea what an avocado even was....

    Actually, one great way of eating avos is to first half them, then dig out about half of the contents of each side with a spoon and mix it up with sour cream (you can add herbs, salt and pepper if you like too, but it isnt necessary, still tastes great). Then strew a fist of small fresh shrimps (cool and fully peeled) on top and dash a little lemon over it, possibly garnish it with a twig of coriander.

    Then just serve the halves on a plate to be eaten with a spoon.

    Great stuff.

    Sounds great!!! least you didn't call it guacamole.
    I like 'em spread on toast in BLT too.
    Tried cooking once when I was a pup. never do that again.

    Nah, some things are sacred, even to me.
    No fish juice in the guac even though I was tempted to add some of my green dippin' sauce.

    Might be pretty good ya know.
