Once n a while The Rim Ping Market up here has imported, Haas Avacados, hard rarely dark. But this weekend they had a few that had that near black skin with a just a hint of softness. Now I ain't had an avacado in 'bout a year, so I bought me one the other day it was 60 baht, small.
Set it up on top the refer to ripen up for a day or two. It was just soft enough today. Thought I'd make up some guacamole, while cruising the other Rim Ping out by CMN's house, I spied some more seriously ripe, dark, almost purple "Avacado Thai." These guys were 65 baht a kilo!
Bought me a few. Gonna be eatin avacodos for a while.
But tonight I'm gonna have about three avacaods worth of Guacamole
Now, there's more recipes for guacamole out there than you can shake a stick at. So I'm gonna help y'all out with the REAL DEAL.
You're gonna need
That's Cilantro, (the juice from) two limes (or so) some fresh oregano; the dry shit just wouldn't do with all these fresh ingredients, if I didn't have fresh I would of just shined that on. Avacados and of course some chilies. Not pictured is the jar of ground cumin, I like to add a heavy-handed dash of that as well
Slice around the seed of your avacados length-wise and twist. You'll get one half with the pit still. No sense diggin' around tryin to dig that fucker out. Just chop into the pt with your knife:
And twist the thing out.
Scoop all the meat out into a bowl,
Finely chop the herbs and chilies. Make sure you get it all diced up nice and fine. You wanna make sure each bite has it's fair share
Dump all that in an over sized bowl
Add enough lime juice to make the mash thick not wet, mash it all up.
You should be able to mash every thing just fine with the back of spoon it's alright if the mash is a bit coarse.
When you're done it should look somethin' like this:
Great right from the spoon or on chips, makes a decent snadwich spread. Tonight I had a pile of wings, I used 'em as an edible scoop & pigged out. the ol' lady thought it was "pet mak" so I had the whole bowl to myself, gee funny how that worked out
