OK, I made an order and got a shit load of that last of supply Argentine striploin and a guy wanted some smoked salmon as he had a piece of my last run and even being Thai offered to pay me.
So anyway I ordered 4 fish, 2 for him and then since I didn't take 1/2 of finished product as I did in the states when I do someone else fish, I tried Mango, not green with bark, but dry without bark and tasted the product right along for the 12 hours smoke and it was fine and I did run apple at 250 baht a small bag for the last hour, but anyway the only trouble you will have with the stuff in chunk form is flameup and heat rise in your smoker,, be better if you could run a bunch thru a saw and use the sawdust, I might try to find a small chipper like we have in the states and then chip it as small as possible as chips work well too, but I am going to do some green and will add what go on with it, so do not be afraid of Mango as well as Tamerind, but as I stated before, Tamarind is quite similiar to Alder and easy to get to much so I am off the tamarind for most things.

No, That was just when we was poor and could not afford to much so they bought me a pair of pants so I have something to wear and cut the bottom out of the right pocket so I have something to play with..

I must be getting very indoctrinated towards BG's writing style, misrepresented grammar, illiterate puncuation, and all around American vernacular - because I don't even give such items a second thought. Quite understand his scribblings. A note to his recent founded explorations into local wood-types {and corresponding threads} for smoking purposes, I have taken with interest.

I've a shirt-tail relative up Sukhothai way that creates pottery kilns and assorted oven of every size with termite monuds/nests. The active ingredients that the little buggers employ to strenghten their protective locales is stronger than any brick or terra cotta material one mind find....we have one here - as a smoker or all around utility oven.

He does, and he doesn't. He would make you one as a favour really...he's not into the profit motive. He's a very secure college teacher who has had a long interest in re-creation old Sukhothai/Sri Satchanalai earth ware {almost a hobby}. Learning from practice and old timers in the region, he learned of this termite mound 'mud'. An abandoned nest is best {so I've been told}. Quite straight forward recipe really. The broken up termite dirt is made into a workable mud, sometimes they will add finely ground rice powder. Nothing else much but dry hot sun to cure, needs to be left alone for a substantial time. No firing or other special applications. When thoroughly dried/cured, as solid as granite!! Great amounts of heat only enhances the strength.....actually Nawty, this might be used more commonly than you might think. You are re-locating to Khorat soon, yes? I bet one could find such works there as well.

I have seen them around before, have a couple of pics of one somewhere. I did not realise they were made from termite nests though, makes good sense really.

I shall have to go collecting termite mounds.

When you say it has to be left to cure for a long time...how long is 'long' exactly ?

If you get any photos of one, please post it for me....nice to know some detail of how it is actually built and the mechanics of it....air in and out etc, fire placement, smoking only method and so on.
