OK, I made an order and got a shit load of that last of supply Argentine striploin and a guy wanted some smoked salmon as he had a piece of my last run and even being Thai offered to pay me.
So anyway I ordered 4 fish, 2 for him and then since I didn't take 1/2 of finished product as I did in the states when I do someone else fish, I tried Mango, not green with bark, but dry without bark and tasted the product right along for the 12 hours smoke and it was fine and I did run apple at 250 baht a small bag for the last hour, but anyway the only trouble you will have with the stuff in chunk form is flameup and heat rise in your smoker,, be better if you could run a bunch thru a saw and use the sawdust, I might try to find a small chipper like we have in the states and then chip it as small as possible as chips work well too, but I am going to do some green and will add what go on with it, so do not be afraid of Mango as well as Tamerind, but as I stated before, Tamarind is quite similiar to Alder and easy to get to much so I am off the tamarind for most things.
