    Odd Cooking Tip(s)

    I was boiling some eggs last night and was reminded about a trick I learned years ago in the Brigantine restaurant in Ol' Del Mar, California.

    How can you tell if an egg is boiled or not boiled without cracking it open?

    Spin it on a flat surface. If it's boiled, it will go up on it's end.

    If it's not boiled, it will wobble around lamely on the counter.

    LoL, My maid showed me this one last week. If you like spicy food, but don't want pain the next day, gently pan-fry the chillies before adding the to food. You will still get the spicey taste, but no aches or bowel spasms the next day.

    Another tip, and this one I learnt from my mum. If you want a soft-boiled egg but the shell not cracked all over the shop, put a small hole in the "blunt end" of the egg. There is an air pocket in the egg and putting a small hole in it will allow the air to escape while the inside of the egg expands under the heat.

    I had an Indian curry with another softy seppo today. Sweating like a pig eating one of the mildest curries known to man.

    Yup that it is mate. Floating them in the downstairs sink with gobs of ice. Damn Marmite, some chiles are really too hot to eat with the seeds if you want taste. One reason I prefer North Indian to South Indian food.
