Props Fruit Crumble

As now is the time for fresh picked cooking apples, I had picked a nice bag of Bramleys from one of my clients garden. As I wanted to freeze these down, I decided at the time to do an apple crumble. Here is the ingredients that you will need,

Some cooking apples
Lemon
6 oz plain flour
3 oz butter
2 oz sugar
Some corn flakes



Peel and core the apples then slice. To avoid discolouration of the apples squeeze a lemon into a saucepan of water and drop your sliced apples into that. I always par stew any hard fruit before making the crumble but this is not necessary.

To stew - Empty and drain your sliced apples, throw into a saucpan with a bit of sugar, the amount of sugar depends on the sharpness of the fruit. Add a tablespoon of water bring to boil and simmer for about ten minutes.



Whilst this is going on you can make your crumble mix. I cheat on this as I use the processor for the mixing. Add your flour and butter and mix to a fine crumb. Stir in the couple of ounces of sugar.



Because I make a fine crumb I then add a good handful of corn flakes to give it a 'crunchie' taste, and stir this in by hand.




Layer your stewed fruit into a baking dish and and then top with the crumble mix. Bake in an over at 200C or gas Mark 4 for about 30 mins. If your fruit has not been par steewed cookng time should be about 40 mins.





An here is the completed product. An oops here as I forgot about it and gave it ten minutes to long . Made the crumble more biscuity, but nothing to much that a nice drop of custard wouldn't cure. Enjoy

Looks tasty props. I like to use brown sugar for the crumble, to add a bit of a treacly flavour. Ive got 4lb of apples in the freezer (fresh from the orchard) waiting to be made into crumble, plus a couple of jars of sauce. Do you think the apples will freeze ok?

^ For freezing I usually prepare them as for stewing, but dont add sugar. Blanche for about a minute, drain and plunge into ice cold water. Drain and sort in small containers and freeze.

Yep could have used brown sugar

I did the same as you said above, but added a little sugar to the freezer container. Hope it doesnt affect them. Oh well i`ll see when i make the next crumble.

Interesting idea to add cornflakes, never tried that before, but it's got my stomach rumbling.
