It was friscofrankies thread here (Mexican Food in Thailand, Roll Your own Carnitas) that gave me the idea

So I got a couple of chicken breasts, took the skin off for the dogs, covered the chicken in tomato ketchup, lime juice, big sliced chilli peppers, pepper, salt, onion, garlic, cummin, tumeric, mixed it all up and chucked it in the fridge for a few hours to marinate.

Gave it another quick stir up and then it was time to stick it in the oven.

My one mistake was not adding some water or something to it as I thought the fat from the chicken would supply enough liquid for the final bake.

Ready to go into the oven for the first time.

Broken up with a knife and fork, couldn't be bothered to go down stairs to get another fork.

And baked a second time on high and turned over every 4 minutes, probably should have added some liquid as some bits were a bit too dry, but apart from that it was pretty damn good.

Little tip for you Dog, Brine yer chicken, adds moisture, adds taste, simple brine is just salted water & soak for 2 hours. a better one is

¾ cup

Salt

½ cup

Sugar

¼ cup

Molasses

1 teaspoon

Garlic powder

1 teaspoon

Onion powder

4L of

Water
