Sandwiches

I've spent too much time trying to find a similar thread and failed.. So this thread is all about sandwiches.

If there's another thread I'm sure someone will let me know ands bin this one. No worries.

So, my first little piece of resistance is;

The toasted cheese, with Lea&Perrins and cucumber sandwich.

1. toast 4 slices of granary/brown/ bread on one side.
2. On the untoasted side put L&P.
3. Lay slices cucumber on top.
3 Lay slices/or crumbles of cheese on top of cucumber.
4 place under LOW heat in grill.
5 smoke cigarette, drink beer.
6 look at toasty thing, hopefully cheese melting.
7 withdraw from grill.
8 splash a little more L&P on it. Or, and scrunched up Basil leaves, or some ground chilli, or jam or whatever,

9 shove back under grill. You the cheese to start browning but you don't want to kill the bread.

Cheese bubbling/brown ?

Take out.

Rest
beer, smoke.

Return to food.

Eat.

Good bread, sliced. That stuff in the greeny packets from 7/11 will do.

Tomatoes sliced thin.

Basil leaves ripped to bits, small bits

cheese, the sliced processed shit will do but you need to use lots of it. Good quality, real cheese is obviously better. Chedder etc.

Extrta virgin olive oil..... Yes, it sounds gay but it's bloody good. Buy a small bottle of the most expensive. You won't be using much.

3-4 cloves of garlic. (to taste really but only sad people don't like garlic.)
Probably not the big chinese garlic cloves, not much taste.
The small Thai ones are better and she'll/he'll peel 'em for you.

Toast bread. Now if it' that thin white shit, see if you can toast two slices together. If not use the frying pan. No oil or stuff. Just get the pan hot as and stick your bread on it. One side done? OK take it out, light brown is good. Don't over do it.
So, onto the the toasted side rub the garlic..... lots ..... just rub away ....lots.
places the thin slices of tomato on top of the garlicky toast.
lay the crumbled/sliced cheese on top of the tomato
put the basil into the cheese. Depending on what cheese you're using you might put the basil on the tomato and then the cheese on top. You'll work it out.

Having added all the stuff on to the toasted side your now ready to put it back into the pan, low heat, we want this to brown the toast and melt the cheese.
Lowest heat possible and a lid will help.

Probably 10 minutes or there a bouts with a bit of a lid.

Sniff....... you'll smell the garlic, the basil and, possibly the cheese if it's any good.

Let rest, covered for about a cigarette and a half. Pop a fresh cold one and eat.,.

I've added

Anchovies --good
egg ---ok ish
finely sliced sausage- -spicy and good
chicken slices - booring and tasteless
tuna --- booring
vegmite --brilliant
marmite -- same same... Work really well with tomatoes
sardines in tomato sauce --good, mixed with some Mango chutney, yum yum.

I'm bored now, and hungry,

spread evenly with butter
place one slice of ham on one side
heres the clever part
sandwich the 2 bits of bread together
wallah!!
cut into triangles and eat.

if this gets a little boring for you, don't be afraid to experiment, last tuesday i made them and cut of the crusts, worked out pretty good

Honey Grilled Chicken with Curried Mayo

I invented this at uni,

1.Brush 2 chicken breasts with honey and start grilling. Keep brushing every now and then.
2.Get a nice foccacia or chiabbata (spelling) loaf and cut into slices. as amny as you need.
3.Mix some green and red oak with red onion and balsamic vinager and other salad stuff if you like it.
4.get a small bowl for your mayo and mix in a teaspoon of curry powder.
5.Get the chicken out the grill and slice it up and arange your sandwhich with the chicken salad and curried mayo.

I just knocked this up for dinner tonight after work. Not too creative but sometimes you just crave a big ass burger. This is about 350g of seasoned ground sirloin with extra fat cut in from some ribeyes and grilled bacon with crumbled pecorino reggiano, dijon aioli and good ole ketchup, lettuce and onion.

add all the innards, butter the outside of the bread and grill lightly

Grilled Cheese -- my all-time fav
Tons of grated cheddar cheese
whole wheat bread
butter/marg
butter bread on the outside, add the cheese inside, grill til golden. MUST BE CUT IN FOUR TRIANGLES. Else it just doesn't taste the same. Big glass of milk.

Aussie right? Makes me want to lick my lips, I use Coon Cheese and had one of those for brekkie today. Ahhhhh memories of home.

I also love baked bean sandwiches. Heinz baked beans in ham sauce, Coon cheese on rye bread, pop into the sandwich maker. Delish.
