One of my favourites, and - *gasp* - no meat. Serves about 4.
Ingredients
* 2 medium cans of chopped plum tomatoes
* Some good extra virgin olive oil
* A nice bay leaf
* A teaspoonful of sugar
* A big handful of nice mushrooms, sliced up (I like shiitake)
* Two big garlic cloves, chopped finely
* A handful of pitted black olives, sliced in two
* A small bunch of marjoram or oregano, leaves only, chopped
* Freshly crushed black pepper
* Some nice sea salt
* A big knob of butter
* Spaghetti for four
Method
* Heat a heavy-bottomed saucepan and add a good glug of olive oil
* Add the bay leaf, the chopped tomatoes and the sugar
* When it comes to the boil, put a lid on it, turn the heat way down low and leave it for 30 minutes, checking occasionally that it isn't sticking
* Add all the other ingredients (garlic, musrooms, olives, herbs, salt and pepper to taste) and simmer covered for another 20 minutes
* Cook the spaghetti until al dente, strain, add butter and pepper and shake it all about to coat the spag
* Plonk the spaghetti onto the plates and ladle the sauce on top
* Serve with crusty buttered bread
