    Luigi's Kilbeggan Whiskey Ribs.

Doing up some whiskey ribs, and looks like the old maid either skulled-back or thieved me Johnny Walker.

Found some duty-free tasters at the back of a cupboard.

    That Kilbeggan one will do.

A rub of some grated garlic, ginger, thyme, ground black pepper and yer whiskey.

That fookin' 8 year old single grain Greenore was eyeballing me the entire time.

Looked up and so was me fookin' dram.

Well, would 'ave been rude not to.

    Mmmmmmmmmmm, smooth.

Was tempted to keep on going with the other ones, then drunk drive down to Villa for a liter or three of Jameson's, but I've 24 cans of San Mig Lite to get through before the Main Mrs comes home, so will shotgun them instead.

Ribs are rubbed, wrapped in foil, and into the oven for 4 hours at 100 degrees Celsius. Ribs at the top, oven dish full of water below.

Time to do the marinade and let it sit.

Hi Ram O'Dan , could you rush me a sample of the marinade without the herbs abd spices, I've been advised only halal single jolts this month.
Your wide selection of Hibernan liquids indicates great restraint or a a talent for emptying bondage wharehouses.

And let it be known, it has thus been Christened.

Marinade of honey, soy sauce, whiskey, grated ginger, salt and pepper.

Heat it up, then cover and let it rest until the ribs are out of the oven.

    *Psssshhhhhh*

    Can of beer opens.

    *ahhhhhhh*

    Feet go up.

Break over , can you get it up? , it's a slow day at the Mozzie abattoir and ministry of mango harvesting.

A technical question would it work if you just drink the whisky first and it marinades in the stomach?

Slap would have used Lao Khao....

Not to seem critical....but did you overlook an acid to go with your sauce? I would suggest that a squeeze of lime might pair well.

    Spot on.

Was supposed to tell the Main Mrs to bring back some fresh limes, for that and the San Mig Lite. But forgot due to being sensationally drunk.

As was me phone... Which I suspect found another pack of Duty-Free Whiskeys... and necked the koonts.

Hence the crap out of focus pics.

    For the rosemary wedges.

    Unwrapped after the slow baking.

    Basted n burned.

    Finger lickingly tasty.
