    Carbonana

    For 2 to 3 persons
    Only use the egg yolks.
    chopped 3 slices of bacon.
    Double cream is better but more fatty
    Garlic salt coz I'm a lazy SOB.
    Cheddar cheese.
    Mushrooms cooked in butter and drained.



    Mix cream, cheese, egg yolks, S & P and garlic salt.



    Drain pasta, put back in pan,
    place back on low heat and add sauce.
    Add bacon & mushrooms and mix.









    Don't forget the parmesan oops.

    Its not traditionally done with mushrooms but they do add to the dish if you like them.

    I disagree....though they should be minced so they can be caught up in twirl of the fork. The earthiness is a great balance to the heaviness of the cream and cheese, in my opinion.

    The large 'shooms are just in a dipping sauce.....

    I agree, but I have grown to love Shiitake mushrooms over button mushrooms. A carbonara with mushrooms is delicious.

    It should be British but the SNP (Scottish Nazi party) dislike anything sold in Scotland to be associated with England.

    Other than that its probably the lush grass as it rains 300 days a year here.

    mince those onions garlic bacon blend the mushrooms and egg and beat the fuck out of it and add cream and boil to fuck,add pasta and you have an authentic cabo sauce.

    The put off here is the price of pancetta (Guanciale is even harder to find here) and parmesan.
