    Leery Lulu & M'Babudje's Chicken Chick Pea Curry-aliscio.

    Chicken breasts
    3 small onions.
    4 cloves of garlic.

    Coriander seeds
    Black pepper
    Cumin seeds

    Spices (1 Tsp of each) :

    Chili
    Paprika
    Curry
    Masala
    Tumeric
    Coriander root.

    Can of tomatoes and Chick Peas.
    1 cup of chicken stock.
    Coriander.

    Toast the coriander seeds, black pepper and cumin seeds in your dry pan.



    Grind.

    Brown the chicken and remove.



    Using the same pan, add some more oil and add the ground toasted seeds, with the minced onion and garlic.

    Add the rest of the spices and the chicken after a few minutes.

    Fry it up and add the tinned tomatoes, chick peas and chicken stock. Bring to the boil then simmer for 10 mins to let it reduce.

    You know that the 'curry powder' is just a combination of the other spices in the picture plus cumin, right?

    Why not just add cumin?

    Put into the serving bowl and pull the chicken breasts apart with forks.

    Garnish with ripped coriander and parsley.






    Served with bread and rice.

    But you really shouldn't toast the peppercorns...they lose too much essential oil.

    I wonder if Bob will be as disparaging that Lulu uses bought curry powder. He and ENT apparently create their own from spices picked by virgin boys on new moon eves on the southern slopes of mountains fertilised by roaming wild horses.

    Waughs is not bad. Nguan Soon's (Villa Market) is excellent.
    The toasting of cummin and corriander seeds is essential, no matter that the masala may be made with them.
    I would have added toasted black mustard seeds.

    I'd suggest also to put your tomato pulp in first and let it brown a bit...the Maillard effect. It really makes a difference.
