    Luigi's Green Curry Paste Supremo.

    No Lobo shite.



    5 stalks of lemongrass - bottom 1/3rd of each, finely sliced.

    200grm of galangal, minced.

    9 shallots, minced

    9 garlic cloves, minced.

    coriander roots, finely chopped, add a few leaves too.

    5 or so kaffir lime leaves, ripped and finely sliced.

    Rind from one kaffir lime.

    Some ripped basil leaves

    Big handful of small green chilies. If in possession of a wagina you may wish to de-seed some of them.

    Like I did.

    Two large green chilies, de-seeded and finely chopped.



    Coriander seeds, white pepper seeds, cumin seeds.

    toast in a pan until smoking.



    Start to smash her in.



    Add:

    100grm shrimp paste

    juice of one lime.

    Paste is done.



    Paste will store for a while.



    Just add a drop of olive oil and mash it down tight.

    Might make up some Green Chicken Curry Pies next week.


    Tonight though, I've got some chicken breasts slow cooking in coconut milk.





    Will take em out in a few hours, pull them apart with forks.

    fry some paste.
    Throw in the chicken.
    add some coconut milk.
    Eggplant can fok right off.

    done with rice, roti and icy beer.

    The problem is no matter how nice your paste was you ruined it by using chicken breast. The driest cut of chicken. Then you barbecued it first to make it even drier.

    I prefer the breast when eating chicken. But would never consider it in a curry or soup. Especially twice cooked.

    Use some nice thighs next time you dont even have to cook them. Just let them poach in base. Then you get a nice juicy meat and not a dry shred.

    Impressive base but once again,you are cooking Loogie Thai not the real thing.

    AO, he slow cooked it in coconut milk....but I do agree with the thigh meat suggestion. For me, chicken breasts have little/no flavor, where as you get some good boneless thighs and it's a major flavor bump.

    pull apart with forks.



    Fry up half the green curry paste with some of the coconut milk.



    Mix in and pok pok up the pok pok.

    Add in the rest of the coconut milk. Add some sugar and salt to taste.



    Reduce down.

    Serve.



    Check out some Pok Poks online.
