200grm galangal
9 shallots
coriander roots

All finely minced

100grm of large dried red chili, de-seeded and soaked for 10 mins.
50 grm of small dried red chili, de-seeded and soaked for 10 mins.

Then minced.

You'll soon find out if you have small cuts or grazes on your hands.

100grm Shrimp paste

cumin seeds, black pepper corns, coriander seeds and one green chili de-seeded and minced.


Dry pan your cumin seeds, black pepper corns, coriander seeds and one green chili



Make an iced coffee and take a break.




Smash 'em all up in your pestle and pok pok pik pok, add a spoon of tomato paste, and you're done.

Slow cook your pork in coconut milk overnight.

Fry up half your paste

Add your pork



Add fresh coconut milk



Stick some in a bowl for dinner, and some in boxes for the deep freezer.

Luigi - try this..

Half your coconut milk in the pan, no oil. Heat that until is separates into oil and flesh, and the flesh starts to brown. Use that as the oil to cook the paste in. You will find the jump in depth of flavour remarkable.
