    Ganso Ibérico

    Here in Germany the traditional X-Mas dinner is a goose. This year I will try a Ganso Ibérico instead of the regular farmed white goose. I started the thread now so I have to put up and can't be a lazy git as Betty Boo said . The goose will be prepared today but made tomorrow. Germany has 2x Holidays not only one. I guess we behaved better then the rest

    Try to come up with a little info about the goose

    Ganso Ibérico de Dehesa is a project of biological free range where the geese benefit from the pastures of the " Dehesa " and there growing herbs .
    The BIO Goose has an approximate weight of 3,5 - 4kg . The geese are reared with a extensive rearing system at pasture .
    The Goose may 24-26 weeks enjoying the pasture and there growing crops . The pasture grass is very rich in essential oils, herbs ( lavender, rosemary , thyme ) and micronutrients that are present only on these pastures . In addition, mature in October to February, the growing on the oak acorns .
    The combination of grass and acorn gives the goose meat its exceptional flavor and juiciness . The acorn in turn is very rich in unsaturated fatty acids , eg . As oleic acid . In addition to its high health value it gives goose excellent quality in both the intramuscular fat and in fatty tissues . This can be seen in flavor and especially the taste of the product .

    Used to keep ones like white pix in France great guards better thann dogs .dogs lay no eggs.
    Eggs to big strong for brekkie used for dogs.pigs or cake ok.

    Have tasted Iberico in Spain yes its superior in every way enjoy.

    If you can import a breeding pair to LOS let is know I'd be interested in some some chicks and have a go ,of course diet and climate may not suit local geese much smaller

    The only thing Iberico i have ever eaten is the the ham from the black footed pigs that eat acorns.

    That goose looks nice.

    Switzerland also has lots of holidays. And to top it all off, today it is 13 degrees and sunny.

    I have so far Skyped Ireland and Munich. Edinburgh later on...!! Canny wait to see that wee babby!!

    Years ago, a friend of mine got a baby chick turkey in September. He paid for the feed etc. Killed it and plucked it (i did not give it a name) and brought it to my place, only to find it was to big to fit in the oven. So we removed its legs and wings and all went well. Imagine a guy on a moped, driving through snow filled streets with a fresh turkey in his rucksack at 2 in the morning!!!

    Golly gosh, i wish i was still young. And we fed twelve people with it and four cats. Lunch was announced at 3pm - we ate at 10pm.

    You remind me of something ! I think I have to go to Oma (again) and get a bigger pot for the goose to fit into the oven.
