Yes, the meat is quite dark on those freerange birds.

The problem is its a 3.7 kg bird. If I fill it no one eats (the stuffing) it like every year. So I just stuff it with some oranges to not let it dry out.

O.K. change of plan.
The goose is to big for us so I decided to break it up. Legs will be done tonight. The breast will be smoked in about 4-5 days. And a soup with some rest meat is in the making.
