The Thai version is a sweet, very mild sauce.

For me its the complete opposite. The American version is much sweeter. Try the real Sri Racha sauce not a knock off. Its not sweet and the heat level is up to you when you buy it.
As maanaam says its for sure not sugar based. Once again I think your lack of knowledge of Thailand or Thai is holding you back... :)

I should also say that the export manager was extremely positive and responsive to all my questions over a max of 1.5 hours from initial point of contact.
Hugh's special 10 minute recipe for Sriracha sauce. follow these directions and you can't go wrong.
1: Jump in car.
2: Drive to supermarket.
3: Buy Sriracha sauce
4: come home
5: put in pantry for use as required
Just tried the Strong Hot with Khai Jiao Cha-om Thort and it was far from hot.
