    Chazzer's pork pie surprise!

    Went to the market yesterday, bought some pig fat and pork shoulder...

    How to make a pork pie:

    450 gm plain flour.
    1 egg yolk.
    175 gm lard.
    100 ml milk.
    Pinch of salt.



    Flour, pinch of salt and egg yolk into a large mixing bowl.
    Heat the milk and lard in a pan, low heat at first then bring rapidly to the boil.
    Pour over flour and egg yolk, bring together with a wooden spoon.
    Kneed for about five minutes, place in clingfilm and rest for about 20 minutes.


    About 900 gm pork shoulder (bacon optional)



    Cut into small pieces or blitz in a blender.



    Construct the pies, egg wash and place in the fridge for about 15 minutes to rest.

    Pre-heat the oven to 200 c.

    Place in oven and cook for 20 minutes and then turn temp down to 180 c, cook for a further 40-50 minutes or until golden brown.




    Now, here's the surprise...






    Later on today, I will add some gelatine (if there's any left!)

    The jelly stuff is made from pigs trotters, Melton Mowbury pies do any way.
