    Aussie Tenderloin Steak.

    Was lazy.

Found some Aussie steaks in the freezer. Went for a tenderloin.

At room temp. rub in some decent ground salt and pepper, then some EVOO.

Some EVOO in a very hot pan and do each side for 2 mins.

Do another 7 minutes on a lower heat, turning every few minutes.

Put on a plate and cover with foil for 10 mins.

Sear the veges you want in the pan, then the nice trick of a dash of water and knob of butter into the empty pan, and scrape away while reducing it, then pour this over the steak and yer done.

[Many chefs won't cook with Enhanced flavoured oils, as they can alter the taste of foods, veg oil is neutral and can be finished with butter that gives the meat a richer flavour.

Saying that virgin oil with herbs garlics etc adeed are pretty good for slower cooked meats.

Olive, virgin oils spit a lot as well when cooking.

^ I've eaten a few CP pork steaks. They are not too bad but a bit too much fat for my liking.
