Kids graduated from high school Tuesday night and were leaving this morning for a grad trip down to the southern islands so I decided to cook them up a nice meal.
Got some 3/4 inch thick pork butt steaks from Food Land along with some broccoli, onions, garlic potatoes and the fixings for a good gravy.

So I spiced the meat with a cajun seasoning, salt, pepper, then dusted it with flour and browned it off. Cut up the garlic and onions and layered them along with the pork steaks, then added a pork stock and braised them for 2 1/2 hours.
After it has cooked it looks something like this. Reserve all the stock left for making your gravy.
I kept the drippings from browning off the pork and now add a bit more flour to make a roux for your gravy as we like it thicker.
I let it brown on low heat until it was much darker then this. Then smash up the garlic and onions in the stock you have left to make your gravy.
Boiled up some spuds and a few whole cloves of garlic for the mash.
