    Simple fast pork pot roast "braised pork"

    Kids graduated from high school Tuesday night and were leaving this morning for a grad trip down to the southern islands so I decided to cook them up a nice meal.

    Got some 3/4 inch thick pork butt steaks from Food Land along with some broccoli, onions, garlic potatoes and the fixings for a good gravy.

    The food.




    So I spiced the meat with a cajun seasoning, salt, pepper, then dusted it with flour and browned it off. Cut up the garlic and onions and layered them along with the pork steaks, then added a pork stock and braised them for 2 1/2 hours.




    After it has cooked it looks something like this. Reserve all the stock left for making your gravy.


    I kept the drippings from browning off the pork and now add a bit more flour to make a roux for your gravy as we like it thicker.

    I let it brown on low heat until it was much darker then this. Then smash up the garlic and onions in the stock you have left to make your gravy.




    Boiled up some spuds and a few whole cloves of garlic for the mash.

    Now that's good.

    Slow cook with some capsicums, with half pineapple juice half water.


    Then after 12 hours pull it apart and boil it all down to slop.

    Onto tin foil and under the grill to burn the outside edge of it all, while all the underneath is juicy.

    Great for pulled pork tacos.

    I use about 6 of the slices that AO showed in a cast iron Dutch oven.

    Bell pepper, onion, garlic, sage, cumim and oregano with a big dash of paprika for the braising sauce. Not too much salt, just a pinch and a tablespoon of cracked black to round everything out.

    Cover to just the top of the meat in pork broth. Simmer for about four hours.

    While its on, make up a vinegar based bbq sauce. 50/50 apple cider and ketchup (not tomato sauce), a dash of soy sauce, wooster, brown sugar and garlic powder and again a big tablespoon of freshly cracked black pepper. I add liquid smoke (from Villa Thonglor) as well.

    When the pork is fork tender, immediately take it off the heat, break it up and pat it dry. Let it stand for a few minutes to dry out. This will give the meat the will to absorb even more flavor.

    Take the pork and add it back to the pot with the bbq sauce in it, while it's on very low heat.

    Spread the pork on an oven tray and roast it at with the rack on the top spot right under the broiler. Do it in small batches and when you see the edges crisping to the almost black stage, you be ready to make a sandwich.
