    Braised Ribs

    Last week I got some ribs from Sloanes via Passion Delivery.

    I did the regular BBQ with one batch but thought I'd braise a set as it's been yonks since I've done it.

    First I made the stereotypical "holy trinity", of onion, carrots and celery, to which I added some garlic.

    Next the ribs:



    Cut them up and season with simple old S & P....



    Brown them off, it took me two batches...getting ready to deglaze...



    deglaze and bring the veggies to the party.....I let them go for about 3 minutes to soften them up a touch.



    Add your braising liquid, in this case beef broth, water and more cabernet. I also added a couple of sprigs of rosemary and a tablespoon of tomato paste.




    I'm going to let time go for about 2 hours then check. I'm guessing about 3 to finish to where the meat is falling off the bone.

    Gravy from the sauce over mashed potatoes with salad is the plan.

    Baked or fried potatoes would be better but fill us in, not only yourself about the cuisine outcome.

    Those look good! My wife has been roasting ribs in the toaster oven lately and that sure works out well. About 3 hours at 125 C and they turn out perfect every time. You can throw in some vegis and potatoes about half way through as well.

    We do the same, but sometimes finish them on the grill if I've got the time.

    The meat is just falling off the bones.....




    However, made two mistakes......

    I should have added some peppercorns to the sauce as well as bay leaf.

    Nice one Tops.

    Might do that next time. Though it's very hard to give up the slowbaked for a few hours then basted with soy sauce and honey and grilled to burn method.
