    One pot meals

    I am a massive fan of cooking for myself out here in Thailand,it's something to do after work and I only enjoy a limited amount of Thai food. Does anyone have any one pot dish recipes that they would care to share?

    If you like Japanese curry (tastes like the Chinise curry you get back in the U.K), then this is a piece of piss.

    Pick one of these up for around the 130 Baht mark in most supermarkets.






    Coarsely chop a large onion, 2 large carrots and a few potatoes.

    Chop up around 400g of whatever meat you fancy into bite size pieces and brown off.

    Put meat and veg in a large casserole pot and turn the heat up.

    Add 1400ml of water, bring to boil and add a slab of the curry paste at a time until it dissolves.

    Let it stew for an hour or 2 and eat.

    Should turn out like this...



    I make around 6 dinners out of it.

    Eat one and freeze the rest.

    Total cost (depending on meat is around 250 baht).

    Buy some rice on the way home.

    ^^ thats 2 pots unless you buy rice on the way home.

    My brother used to fry sausages, when they were cooked, chuck in a can of baked beans to warm through, and when it was bubbling, a couple of raw eggs. The whole things turned pink and tasted really strange. He liked it though.

    Anyway

    1 onion
    3 cloves of garlic

    Fry in oil gentle until translucent.

    Chuck in any meat and any veg you like. After that has cooked chuck in a spoon of flour and cook until you cannot smell the flour. Add chopped up potato, rice, pasta. Add stock (chicken for chicken etc) and cook until the spud/rice/pasta is cooked. Add herbs if you like.

    Eat.

    spaghetti, or pasta of choice.

    one tin of tuna
    one tin of cambells condensed soup
    one onion chopped one bell pepper if you like spicey one chilli
    handful of mushrooms

    slowly saute onions and chilli(bell pepper),and mushrooms
    add tin of tuna with brine add some Nam pla.and reduce the liquid

    add tom soup,bring to boil add a bit of tomato ketchup,and half tin of water, and if you have fresh parmesan add to sauce, then add pasta and season with fresh ground peeper, top with parmesan.

    Have a look on YouTube for The One Pot Chef. He's a bit of an annoying bastard but he's a good home cook using basic ingredients in easy recipes, for sure you'll find some dishes he does that are worth trying.

    I used to boil spuds with an onion and mash it all together with a tin of corned beef and seasoned with salt and pepper.
    Very simple and quick and surprisingly good.

    small onions so they dont fall apart. just melt when your fork or spoon hits them.

    ^Crock pots don't get hot enough for you to brown off the meat or sweat your onions. Getting into two pot cooking territory.

    I do love my crock pot. It is the best for making chili.

    One thing to do is to make a big batch of boring stew or mince. It freezes well too.

    One day have just normal stew, perhaps adding tatties. Another add the curry, another add chili. Then all you have to do is cook rice or pasta to go with.

    And they say the more you cook it the better it is. The last day might just be slop, but yummy slop!!

    Yes...
    Crock pots [per se] can be rather limiting regarding technique.

    true enough, but in my thinking....crock pots were one of the greatest culinary inventions ever for people that can't really cook but can follow a simple recipe.

    I do this with chilli co carni. I'ts great cos you can add to anything you like.
    I'm convinced that a little freezer time only improves the flavour too
