but it turns out that sugar and fat mixed are the real killers.

Yep, I made some shortbread the other day and never realised until I did that it is just butter and sugar with some flour . Half a packet of butter ! And I only ended up with about 7 smallish biscuits and ate them all myself ,I would never dream of eating half a packet of butter normally .
