    "Whoah. Nice Rack

    Ive been hankering for some Lamb Lately, so for the second time this year i cooked dinner. A quick trip on the wifes honda wave brought me to the Minimart where i was relieved of 300 000 kip for a rack of Lamb



    Bit pricey but considering ive never seen a sheep in Laos i wasnt complaining to much

    A quick google got me a recipe for Parmesan crusted lamb rack, pretty easy and simple recipe really.all i needed was
    2 TBS honey
    2 tbs wholegrain mustard ( didnt have any so used dijon )
    1 lamb rack
    half a loaf of yesterdays bread for the bread crumbs
    half a cup finely grated parmesan, i just used some mottezzerella and some parmesan from a tin
    2 cloves garlic
    2 eggs lightly whisked
    Rosemary

    First step was combining the honey and mustard in a bowl then smearing it all over the lamb, popped it in the fridge for a while while i got on with my potato dish


    Next step was to knock up the bread crumbs

    It was bloody good,

    In the Bender i added the chopped bread , garlic, rosemary and some oil
    Then added the parmesan and Motza



    blend until breadcrumbs appear then transfer to a bowl and mix in the whisked egg



    Next step is to firmly pat the bread crumb mix onto the rack




    before popping it in the oven i lighly gave it a spray with some olive oil and had another beer


    i baked that sucker on a low heat with the roasting dish covered in foil for 25 minutes then removed the foil , Cranked up the oven to "Fuckin Hot" to get the
    breadmix nice and crusty for a further 15 minutes

    In real money 300 000 kips about $37 roughly , Yes Not cheap.

    Heres the end result



    Next it was of to google a potato recipe, i chose a baked cheesy sort of dish ,

    First up peel a couple of spuds and dice some onions




    i threw in some bacon as well

    In a baking dish arrange the ever so thinly sliced spuds and drizzle with some motzarella



    Heres where it gets weird

    next the recipe said combine sour cream and a can of soup in a bowl and mix well


    spread it all over the potatoes then add another layer of potatos and spread some grated chedder cheese over that lot




    Next we melt some butter in a saucepan , use this to mix into a bowl of Cornflakes

    YES, punters , the recipe said use cornflakes to top off the baking dish , coating them

    in butter makes the crust nice and crispy


    i ran out of cornflakes and had to use a bit of special K ( not as bad as it sounds )

    Baked it in a moderate oven for about an hour ,
    heres how it turned out

    It is BLD a nice rack, also you have a nice oven, I have one myself, well pleased with it, but I must admit my round glass convection type get used more now.

    It is quite a good oven , i must try to use it more often, when we done up the kitchen we ordered that from Homepro in udon , but the fuckers at the freindship bridge charged her indoors duty on it when she went to pick it up , so didnt save any money by buying it in Thailand
