    How to clean and cook pladuk

    How do you guys clean and cook pladuk? Leave the skin on or skin the fish? How do you cook it?

    You surely have to leave the skin on or it will fall apart on grilling? in fact I don't recall any fish where the skin isn't left on in Thai cooking.

    Gut it. Skin on. Rub with salt. Make some slits in skin. Stuff some garlic and chilies in slits. Wood skewer and barbeque.



    Also many other dishes but above simple and tasty.

    The cajuns do purdy good things with catfish- you should check out some of their recipes, as well as Thai style.

    ^^ Pla duk fu is a personal favorite.

    Stir-fried with Ginger Thai style (Thai language but you can figure it out)




    Pad Prik Kaeng Pla Duk Stir-fried in a curry paste
