    Easy Peasy one pot beef & tomato curry

    This is not a Thai curry. I'd say it is more Indian in smell & taste than anything else. There are quite a few ingredients & I think I remember being able to get the Indian spices in Thailand - if not, apologies

    Despite the large number of ingredients it's really easy to make - just bung everything together and cook - and it tastes & smells lovely!

    OK, for the ingredients:



    500g beef cubed.





    1/4 tsp turmeric, 2tsp garam masala, 2tsp ground cumin



    400g chopped tomatoes. This is obviously canned, but skinned fresh work really well

    1 tsp finely grated ginger, 4 garlic cloves (finely chopped), 2 chillies (finely chopped). I use scotch bonnet or habanero chillies as I like the smokiness and heat, but use whichever chillies are to your taste. large handful roughly chopped coriander




    1 bell pepper (sliced into strips), 1 onion (diced)

    100ml coconut milk, 1tbsp tomato puree, salt & pepper to taste



    350ml water

    That's it for ingredients. As I said, bung them all into a large ish pot




    Mix together...



    Bring to the boil, cover with a lid and simmer over a low heat for 1 hour 30 mins.

    After 1 hour 30 mins it will look like this. Remove lid and increase heat while stirring occasionally to reduce and thicken sauce for 5 or 6 mins.



    Serve with rice or bread

    Nice one NR. I'm not much good with all the different ingredients so just use a good paste.
    You'll probably enjoy Rick Steins India as he does a proper curry too just like yourself, very inspiring.

    Exactly! All the flavour comes from fat, that's why waygui beef is so good.

    Same as the Prego king 'cooks' spaghetti with a jar. which is fine, there's nothing wrong with taking shortcuts, but they're not really thread worthy, are they?
