    Home made sun dried tomatoes

    This is super easy. Take your chosen number of small tomatoes. Halve and scoop out the seeds. Place them on a non metallic tray skins down (or more than one tray). Season to taste & sprinkle with oregano or basil (finely chopped). Drizzle with a very small amount of oil (olive if you have it). Cover trays with cling film, but make sure to puncture film fairly evenly. Put out in the sun till dried. Gorgeous in pastas or pizzas

    Thanks for the instructions. Those sun dried tomatoes are so expensive in the supermarkets here.

    I'll have to give it a go after the monsoon is over. Maybe the tomatoes would go all moldy before they dried out in this humidity.

    Have noticed them for sale at BIg c, not near as nice as those marinated ones available at eroupean delis in OZ, but a start.

    You can also do them in the oven if you have one. as above just put the oven on the lowest setting and drizzle with some Olive oil oregano and salt and leave overnight.

    Have to admit that even though I love tomatoes, fresh, stewed, fried and make tomato heavy stewed dishes, I just never cottoned on to dried tomatoes.
