    Prague salt cure #1, where to find in LOS??

    I'm looking for a local source for Prague salt cure #1 [6.25% nitrite] for dry curing and smoking some pork bellies and have been looking all over Google, but have only found a source of European cure @ .8 % nitrite and seems way too low from what I've heard and read.
    Thanks in advance for any info..........

    Why not go a chemist and get them to order in the necessary chemical(s) and mix yourself.
    Its what I plan to do once I am in Thailand with a second hand fridge and a copy of Ruhlmanns Charcuterie.

    Actually I do have food grade nitrite and nitrate from a chemical supply house here in CM and may have to revert to that, but I've heard stern warnings about doing it myself because of the danger of the mix not being consistent and getting nitrite hot spots=nitrite poisoning.

    Its technique.
    Dilute the chemicals with a small amount of salt then keep adding salt till you have the full dilution.
    If that seems like hard work use a bread making machine to swish stuff around.

    Professionally when I have wanted to mix powders uniformally I have used a ball mill, at home I have used a ken wood mixer with the k blade

    Assuming I wanted Kg's of mix and to be paranoid about it,
    I would put all of the nitrate/nitrite and mix in 500g of salt,
    I would then repeat the process using 50g of my prepared salt, mixing in 450g of the original pure salt.
    I would then mix together batches of 2.5kg, and then combing them in a bucket/crate to get the final quantity I want.

    however what you can do is experiment yourself, take a pack of coloured jelly and mix it into the salt using the same method you intend to use for the nitrate/nitrite. and then look at how uniformly it all mixes together.

    if you ant to do goodle research just look at the DIY gun power people and teh pharmasutical industry as this is a problem that greatly affects both of them.

    I do, however suspect that you might have a bigger problem. I don't know about CM, but in Bangkok its almost impossible to buy iodine free salt now a days. BBI have/had it in 50kg bags and you can buy small and expensive packs at places like tops, foodland etc. Iodine is seriously bad for meat curing.

    Iodine free salt, no problem in CM and other places in LOS....just go to any of the dry foods shops in any of the public markets and they have a mined salt that is completely unadulterated and says so on the package.......no iodine. Thais use it to coat fish before bar b qing. Problem is that it's really crude with many chunks that really work the blender hard to break into a powder. Best thing is that it's only THB10/kilo.

    Hazz, I just sent off an email to info@bbithai.com. and got it returned. Could they be out of business?? I did manage to find a catalog of their products and it does list Prague salt. They do have a list of phone numbers that I'll try when this damn holiday is over and things return to normal. I'll post what I find out.
    BTW....what is a ball mill??

    They are also used in crematoria to smash bones into powder. Therefore be aware of this if you buy second hand.

    As far as I am aware BBI is still trading, MIL buys stuff from them for her 'local shop', I will see if I can find a more recent invoice for contact info. Thinking about it i think she might still sell their Prague salt in 50g bags.... if you get desperate I will ask

    the stuff in the shop came from BBI and is labelled as globo Prague mix, there no indication as to wether or not this mix 1 or mix 2... at a guess I would expect its without nitrite and that it was orginonally manufactured by these chaps globo foods so they might be worth asking.

    there was no typo she really is selling 50g bags not 50kg; it really is an off street local shop, for local people . I have spoken to her and she has 2.5kg left in the original bag, you can have as much of that as you want or one 50g bag

    I don't think that I would be alone if I were to ask you to consider doing a photo thread of the smoking process. I have to say I might do one for wet ham.... now that I've discovered I have the ingredients

    I use mortens picking salt., made in US but bring back a few pcts from OZ each time. Its premixed with Nitrate.
