    Ox tail soup/stew.

As a boy I used to love ox tail soup so I thought I'd give it a go.
Went to one of the local slaughter houses (more of a hut) and bought the tail.
Weghed in at 2 kg 300 gm. Probably about 500 grammes of meat if I'm lucky.
    160 baht!
Anyway, as a young boy I used to 'bone and roll' pigs for a living.
Here's a few snaps of the tail, before and after.

Please continue quickly - I'm already salivating.

Oxtail is absolutely delicious - so full of flavour.

Can't wait to see your end result.

Bones seasoned in flour, sea salt and black pepper.
Browned off ( not as much as the cow) in olive oil for 5 mins...

After 5 minutes, take the tails from the pan and add a few ingredients.
I used. Red onion, 4 crushed garlic cloves, bay leaves, black pepper and a cup of red wine.

Bring to the boil and then simmer for about 2 and a half hours...
I'm about 30 mins into this part, so I'll probably be posting tomorrow with the results.

P.S. Top up the pan to cover the tails.

I intend to periodically skim the surface and after cooking, when cool, I will place in the fridge overnight and de-fat the contents in the morning...If that makes any sense!

Dillie. Anus successfully removed, fancy a plate?

Well, what can I say. That must have been one of the oldest cows in Thailand.
Simmered for about 5 hours and then put it in the oven for another couple of hours.
Result...Half decent soup, not a patch on Heinz oxtail.
    Never again!

    Good effort though, looks nice!

Personally I could have skipped the first few pics myself, I'm one if those squeamish types that doesn't much like seeing where my food actually comes from.

Am i right in assuming you have left over hair and a cows bottom?

Rather than throw them away, are you open to suggestions?

    Shame about the soup.

Good effort. I love a bit of ox tail soup too. I'll keep that first pic out of my memory next time I eat it though.

I tried it once as well, long time ago, with the local crap. Well, not soup as such. Never again. Terrible.
