Thought I would have a go at one of these last weekend ,, problem is I have to make a bit of pastry first and I am pretty cak at that to be honest , never any success but try try again as the saying goes .
For the pastry 5 ounces of plain flour
3.5 ounces of butter , I used Lurpak :)
1 egg yolk
Ok chop the butter up into the flour and rub together with your fingers like so , also here I have added the egg yolk .

Give it a bit of a mix up and add a LITTLE water and roll up like so , put in a plastic beg and put in the fridge for an hour to chill .

While thats chilling I have prepared my tin to bake it in ,, cutting a piece of greaseproof paper to fit in the 9 by 9 inch tin .
Tip here take the paper out and actually roll your pastry on to the paper then drop it back in the tin after giving it a good pricking with a fork to help cook it like so.

Now were gonna bake this in the oven first for 20 mins at 180 degrees , but first we must put something on it to stop it rising ( ah the memories :mid: ) like so ,, I'm no arty farty cook so I don't have baking beans but I do have small square plates ,, so in they go .

Now while that lot is baking away we can make the mixture for the cake to sit on top of it .
5 ozs butter
5 ozs caster sugar
5 ors ground almonds
if not use self raising flour + almond flavouring like I did :)
3 nice fresh eggs.
Usual thing cream butter + sugar then add eggs then stir in lightly flour or almond grounds like so .

Ok the oven buzzers gone off so we can take our pastry base out like so ,, I like it well done ,, I hate wet raw pastry , and this time I'm on a winner ! this pastry is lovely and crunchy

Then cover the base in raspberry jam ,, I used about half a jar , then lop your mixture on the top like so

another 40 mins in the oven at 180 degrees and it should come out looking like so

Now at this stage you can dust with icing sugar or leave it to go cold and put some icing on top for later on ,, or like I have done serve it up hot with some nice thin sweet vanilla flavoured custard on the top like so

Delicious sweet for after dinner :)
The remainder was allowed to cool and went in the old lunch box during the week
