Rain has stopped play again in the veg garden so lets have a go at an easy to make Victoria sponge ,, although not a sponge in the "true " sense as a sponge has no fat in it , so there !
Ingredients :
175 gms soft butter or marg
175 gms caster sugar
175 gms self raising flour
3 fresh eggs
1 tspn of baking powder
1 tspn vanilla essence
2 ......... 7" circular baking tins .
Gentlemen start your ovens 170 for a fan 180 for conventional oven .
First grease + line your tins like so
Then whisk up your butter + sugar like so
Then add the eggs whisk em in then whisk that for at least 2 mins until bubbles appear like so
Then add flour + baking powder gently mix this in now and pour into your baking tins like so
25 mins later out the oven to cool down ,, in the meantime mix up 40gms of butter with 100 gms of icing sugar ,, when cool spread one half with strawberry or raspberry jam and the other with your cream ,, and if your lucky you might get a picture of it before " someone " eats a slice ! where is she ???
