    Lets make a Victoria Sponge ( with pics )

    Rain has stopped play again in the veg garden so lets have a go at an easy to make Victoria sponge ,, although not a sponge in the "true " sense as a sponge has no fat in it , so there !


    Ingredients :

    175 gms soft butter or marg

    175 gms caster sugar

    175 gms self raising flour

    3 fresh eggs

    1 tspn of baking powder
    1 tspn vanilla essence

    2 ......... 7" circular baking tins .


    Gentlemen start your ovens 170 for a fan 180 for conventional oven .


    First grease + line your tins like so









    Then whisk up your butter + sugar like so





    Then add the eggs whisk em in then whisk that for at least 2 mins until bubbles appear like so





    Then add flour + baking powder gently mix this in now and pour into your baking tins like so





    25 mins later out the oven to cool down ,, in the meantime mix up 40gms of butter with 100 gms of icing sugar ,, when cool spread one half with strawberry or raspberry jam and the other with your cream ,, and if your lucky you might get a picture of it before " someone " eats a slice ! where is she ???

    Frankly, I reckon that lovely looking sponge has been ruined by the cheap jam and cream. You need some real rasberries and some double cream.

    TBH all was going well until I put the cream in ,, I followed it to the letter so blame the twat who gave me the recipe ok ? gonna have to develop some attitude

    The jam should be spread over the bottom piece of the sponge only, and you should have used whipped cream. It looks a mess but the picture shows that the sponge is cooked properly so I would enjoy it.

    The jam was spread on the bottom only Tincan thank you ,, and in any case who eats with their eye's ?? FFKS get it in yer !

    Well, you should use jam which is not mobile. It seems to be invading all parts of the cake. Have you see "The Blob" ?

    Not sure whats happened with your butter cream Nigel. Was it whipped enough, or was the sponge still a little warm when you added it? Either way, I bet it tasted as it should.

    It looks a car crash sponge mate , but it tastes the nuts ,, BTW it was stone cold infact it said 50 gms of butter to 100gms of icing sugar

    I cut it down a bit 40 gms to the 100 icing ,, so I don't know ,, anyway there aint a lot left now so can't be all bad
