    Rhubarb + Ginger Flan

    Having an abundance of rhubarb left in the garden I thought I would seek out a recipe for it from the cook book my wife got me for my birthday ,, damm tasty it was to


    I modified the ingredients for the size of tin I have ,, so for a 9" by 7" tin use these measures .

    125 gram Self raising flour

    125 gram Butter

    125 gram Soft brown sugar

    2 fresh eggs

    4 tea spoons finely chopped crystallised ginger

    1 tea spoon ground ginger

    about 3/4 lb of fresh chopped rhubarb




    Ok gentlemen start your ovens 170 for a fan oven

    Cream your butter / brown sugar / eggs together like so




    Gently fold in your flour complete with ground ginger + half the crystallised ginger .



    Now grease your tin then line with greaseproof paper then add about 3 desert spoons of brown sugar on the paper + 2 tea spoons of crystallised ginger + the chopped up rhubarb ,, then add your mixture on the top of it like so




    Bake in your pre heated oven for 45 mins

    Should look something like this , and by god that ginger is singing now mmmm





    Serve as you wish ,, I have used custard to compliment it ,, creme fresh / fresh creme // condensed milk ,, what ever takes your fancy mabe ice cream

    Arghhh... I'd kill for a rhubarb crumble right now. I doubt it would travel well in my parents suitcase otherwise I'd ask them!

    I have seen it tinned for sale here, but that's not the same. It's sweet... It's the sour I am after

    Wrapped up in damp newspaprr then in a plastic bag should be OK, but finished for this year.

    So what do you think would be a good substitute for the rhubarb? seeing as it's not available here. What other flavour combinations would work?

    IKEA have it in their little supermarket bit.
    Was in there today and saw it in the freezer section for around 200 baht.
