    Massaman Curry ala Cap Pee Set

    Hi everyone, se sois I am gonna step you through one of my favourite curries.
    Surfing around the net recipe sites you will find that Massaman Curry has many variations on the theme. This one is no different as I generally just go with what I have got in the cupboard. That said, I did nip up to the super to get some fresh lemon grass and coriander. I had another arguement with the fruit and veg section manager so to spite him I stole some Galangal as well.

    Anyway here are the ingredients for my Massaman Curry ala Cap Pee Set.



    So we have
    an onion
    one lime (for the zest)
    one stick of lemon grass
    one stolen knob of Galangal
    3 fresh hot chilli's
    2 cloves of garlic
    one wotsit of fresh coriander
    dried chilli flakes
    red curry paste (authentic)
    coconut milk
    tomato paste
    fish sauce
    olive oil
    chilli sauce

    Oh and you are gonna need some dead cow.



    Looks awful doesnt it.

    So first we need to chop the onion and bung that in the pot with a little oil.



    When the chopped onion starts to soften then add the meat along with all the bits except the chopped fresh coriander and lime zest. You can bung that in a bit later.



    If you are on track it should look something like this.



    Now let that cook up on a medium heat until the meat is browned a bit.

    Once the meat and stuff is browned up a bit it is time to add the fish oil (about one tablespoon).



    Stir that through and dont worry about the smell.
    Next step is to add the coconut milk. Just one small capong will do it.



    Also add the tomato paste and stir it all in nicely. It is now time to turn the heat down to as low as you can get it so that it will simmer.

    Stir it a few times ensuring that all the daggy bits of onion aint sticking to the sides of the pot. By now it should be a nice baby shit brown colour.



    Once the heat has reduced and it is simmering, then you can add the chopped fresh coriander and the zest of lime that you zested with the ol' cheese grater.



    Thats it. You are done and can now go and have a ciggie.

    Let that simmer for at least an hour which is what is happening right now, live, as we speak, so I cant show the end result yet but I am gonna knock up some nice fluffy rice and eat it in a coupla hours. Tune back in for the finished meal complete with a sprig of fresk coriander to make it look really snazzy.

    I am just about to give my notice in here at the resort MeMock and move to the Los so starting a vege patch just aint on my list mate.

    The manager at Woolies and I have never got on ever since I pointed out that his fruit and veg section was all to cock. He is gay I think.

    Anyway, I have just finished my dinner (belch) and it was deelishus mate. A bit (lot) too hot though and the perspiration is pouring off me.

    Well folks, like most of what I knock up you should feel free to experiment with different ingredients. I have to say that The Massaman ala Cap Pee Set was absolutely delicious, if a little too hot.



    Good thing I was hungry coz now I couldnt fit another thing in.

    Now Cap. that one looked awsome. But the best part is the commentary, I think with the Aussie twang you'd be a hit in America. "Cooking with the Captain" as you have said. Really nice stuff.

    Cheers mate. Does my ozzie twang really come across in my posts coz my accent isnt really that strong. I spent a long time in the UK and a lot of folks think I am a pom.

    Tonights nosh was awesome if I do say so myself and I have got leftovers for Pru Knee. What a silly name for a gal eh?
