Scalloped Pineapple Recipe

Scalloped Pineapple Recipe


20 oz. can sliced pineapple in its own juice, drained, reserving 1/3 cup pineapple juice
1 cup shredded sharp Cheddar cheese
2/3 cup sugar
1/3 cup flour
1 cup butter crackers, crushed into crumbs (I used Ritz crackers.)
1/2 stick butter or margarine, melted
cooking oil spray

Spray a medium-sized oven-proof dish with cooking spray. Place slices from 20 oz. can of pineapple on bottom of dish. (You may make more than one layer or use the sides, if needed.) Sprinkle evenly with 1 cup shredded Cheddar cheese. Combine the 1/3 cup reserved pineapple juice, 2/3 cup sugar, and 1/2 cup flour in a small bowl. Stir until completely blended. Combine about 1 cup butter cracker crumbs with 1/2 stick melted butter or margarine. Sprinkle the buttered crumbs over the top of the pineapple and sauce mixture. Bake at 350 degrees for about 20 minutes, or until bubbly and browned on top. This is a dish that looks elegant with any menu and goes particularly well with ham or pork chops.

I have both Ham and Pork Chops, but for the last year I have seen no pineapple in any of the stores here, The small Tesco in Topland, The new large Tesco center store and the Big C has only canned Bambuton and the big Tesco does have 2 large cans of Del Monte canned Fruit cocktail and 2 cans of pear halves, did have 3, but I bought one and brought it home, opened it and was like eating a bowl of aggregate mix for making concrete so I threw em in the trash.
