How To Make Potato And Feta Pancakes


This filling Potato and Feta pancake recipe is guaranteed to be a hit with anyone who loves the flavour of feta cheese. Makes a meal in itself. Savour our Potato and Feta Pancakes recipe.


Step 1: You will need
500 g potatoes , peeled
1 small onion , peeled
2 eggs , lightly beaten
2 tbsp parsley , chopped
60 g feta cheese , crumbled
60 g flour
salt and pepper , to taste
60 ml olive oil
4 lemon wedges , garnish
1 frying pan
1 cheese grater
1 colander
1 spoon
1 bowl

Step 2: Prepare potato and onion
Grate the potatoes and the onions, place in a colander stir in a little salt and leave to drain for fifteen to twenty minutes.

Step 3: Mix with remaining ingredients
Squeeze the excess moisture from the potato mix and combine with the eggs, chopped parsley, feta cheese, flour and a little pepper.

Step 4: Cook pancakes
Heat the olive oil in a frying pan. Add 4 tablespoons of mixture per pancake to the pan and squash to make flat pancakes. Cook on both sides until golden brown.

Step 5: Serve
Serve the pancakes garnished with a wedge of lemon and a sprig of parsley!
