Tips for Gluten-free and Allergy-free Baking

Ingredients for White Gluten and Dairy Free Bread
450g (1 6ozs) Doves Farm Gluten and Wheat free bread flour
1/2 tsp salt
2 tbsp sugar
2 eggs
6 tbsp olive oil (sunflower oil)
1 tsp vinegar
325ml (11 fl oz) warm dairy free milk.
2 tsp quick dried yeast

How to make White Gluten and Dairy Free Bread
  • Mix together the flour, salt, yeast and sugar.
  • In a bowl beat the milk, vinegar and eggs.
  • Add the flour and mix preferably with your hands or using a food processor to form a sticky dough.
  • Continue mixing adding the oil.
  • Place the dough in a an oiled 1kg (2 lb) bread tin.
  • Cover and leave to rise in a warm place for 1 hour.
Bake in a pre-heated oven. 200°C / 425°F / Gas 7 for 40 to 45 minutes.

Stuffed Chicken Breast - Gluten Free!

Most stuffed chicken breast includes breading, but this is a dish everyone can enjoy. It contains no gluten, so it's good for those with celiac.

Needed:

1/2 medium green pepper, diced
1/3 medium onion, diced
4-5 mushrooms, diced
2 tsp minced garlic
1 tsp Italian Seasoning
4 oz shredded mozzarella cheese
4 or 5 chicken breasts, flattened
1 can (8 oz) tomato sauce
1 can (6 oz) tomato paste
1/2 cup red wine (or water)

Directions

Using green pepper, onion, garlic, mushrooms, spices, and cheese as a stuffing, flatten chicken breasts and stuff with veggies and cheese. Top with sauce, remaining cheese and veggies.

Cook for 1 hour at 350.
