    Ingredients:

    1 lb ground beef; 1 pkg taco seasoning; 1/4 cup water; 2 cups shredded cheddar cheese; 2 cans crescent rolls; shredded lettuce; 1 tomato, chopped

    Directions:

    Brown ground beef, add taco seasoning and water, heat to boiling and remove from heat. Stir in cheddar cheese. Meanwhile, open cans of crescent rolls and lay on cookie sheet in a sun pattern, points of rolls facing outward, overlapping, but leaving a space in the center. Press together overlapped rolls to form a place for the meat mixture. Place meat mixture in flattened part of crescent rolls. Fold points of rolls over meat mix and tuck into the center. Bake at 375 degrees for 20 to 30 minutes or until golden brown. Serve on large platter and place lettuce and chopped tomato in center of taco ring. Add a side of salsa.

    Chili Beef Burritos Recipe

    Ingredients:

    1 pound lean ground beef
    1 small onion, chopped
    1 clove garlic, crushed
    1/2 teaspoon chili powder
    1/4 teaspoon cumin
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1 package (10 ounce) frozen chopped spinach, thawed and drained
    1−1/2 cups Monterey Jack cheese
    4 large flour tortillas, warmed
    lime slices, optional
    jalapeno pepper slices, optional
    1 cup salsa, chunky

    Directions:
    In a large nonstick skillet, brown the ground beef, onion and garlic over medium heat for 8 to 10 minutes, or until the beef is no longer pink, stirring occasionally. Pour off the drippings and stir in the chili powder, cumin, salt and pepper. Stir in the spinach and heat through. Remove from the heat and stir in the cheese. Spoon equal amounts of the mixture onto the warmed tortillas; fold each bottom edge over the filling, then fold each side into the center, overlapping the edges. Garnish with lime and jalapeno slices, if desired, and serve with the salsa.

    Tortilla Recipe

    How to make Tortilla


    To prepare this flour tortilla recipe, you only need four ingredients: flour, baking powder, vegetable shortening or lard and salt.

    First, stir 4 cups all purpose flour and 1/8 teaspoon baking powder in a large bowl. Next add 1/2 cup of shortening or lard into the mixture and work the fat into the flour with your hands.

    Dissolve 1 1/2 teaspoons of salt into 1 1/2 cups of warm water. Drizzle this slowly into the flour mixture and mix until you have a soft dough. Knead for 1 minute, adding flour or small amounts of lukewarm water if needed. The dough should not be too wet or dry. Once it is at the right consistency, turn bowl over to cover the dough and let it rest for about 20 minutes.

    Next, divide the dough into 12 pieces and form into balls. As you form and roll the balls, coat your hands with a little bit of shortening. Flatten and cover balls with plastic wrap and let rest for 20-30 minutes.

    To prepare the tortillas, preheat a griddle over medium heat. Remove a flattened ball and roll it into a circle. A small rolling pin works well. Turn the dough around after each stroke with the rolling pin. Roll as thin as possible, stretching with your fingers if necessary.

    Place each rolled tortilla on a hot cast iron skillet, pan or griddle and flip over every 15-20 seconds. Youll know its done when it develops brown spots on each side and it bubbles up.

    Serve these warm tortillas with butter right off the pan. You can even sprinkle them with a bit of cinnamon sugar for a dessert treat.
