When you change from an old to new passport are all the previous visas recorded?
For example if you have done 2 land crossings this year on your old one
could you do another this year in your new one?

Assuming you mean Thailand it's all on big brothers computer plus they used 2 of my virgin pages to enter details BY HAND of the old one onto the new at Mae Sai, other offices may differ they seem to operate as a law unto themselves.
Despite all the moans Thailand is a lot easier than many other countries and if you play by the rules had no issue in decades. I hope one day when were all chipped wired and monitored they still wont ask my dead dads profession or the 90 day rigamarole just have a foreigners tax , stamp you in pay direct from the bank daily its not rocket science.

Yeah, when leaving Thailand a year or two ago on my new passport (issued in BKK) the Immi guy assumed I was an overstayer and had got a new passport to try to hide that. This was Hatyai airport, not a land crossing. Seems the big bro computer is not all that great.

Just carry all your passports, used and current, with you. An elastic band is all you need to hold them together.
^ Well it is! Your passport is the property of your government and minor officials of a foreign government should not be defacing it with superfluous handwriting to satisfy their silly self-imposed bureaucratic nonsense, especially 2 pages worth.
