    This is what happens to infertile pigs...three strikes and your out! BIL's lady couldn't make the grade so today she's history and part of tonight's menu...Look out Teak Dorians Especially aging one's...

    Nothing left but the oink! Sorry folks I left out the graphic butchering...I couldn't take it and ran off to take the 22 month old nephew on a travel around Chiang Kong and back. Nice drive even in the smoke shrouded mountains overlooking the Mekong and Laos. Sorry no photos of that either...call Terry 57.

    We once rented a house in Northern Luzon for the the mining company I was working for , it came with a piggery out the back, I didn't have a problem with that until one night about 2 in the morning they decided to castrate the boar, apparently this makes the meat tastier, I've never heard so much racket in my life, that fucker knew his balls were coming of and put up a mighty fight, he had an impressive set of nuts , next day he was dead, probably from grief from loosing the family jewels but more likely just amateur farmers, he still ended up at the market getting less per kilo than had he survived. They do some funny shit in the province

    BLD, I think death was better than a life without one's cods...

    This big lady fetched 8,000 baht so far in after death sales...more to sell.

    Seems she had to go. BIL bred her three different times and no piglets arrived. Consider this a loss in income, so kill and sell off the loss...new pig on the horizon.

    Yeah, they make a great "theme" barbecue...Can't remember if I've tried the porker, but have had Rocky Mountain Oysters fresh off the young cattle at horning and branding time...

    Just press on the grill, flip, repeat, and you have a tasty treat...

    Thanks for Pic's ltnt. I have seen the Thai process of spinning it over a bed of hot wood and coals for quite a long time. Awesome taste. To me, based on the pics, it did not look like it was cooked thoroughly at all. Usually the skin splits and the 'White" meat color is gone. Also interesting it was just laid on that little fire. How long did they cook the sow?

    Sometime back I showed the underground wrapped in Banana leaves process to my wife and she agrees it would be a great method and we will try one.

    An age old process towards preparing pork by numerous cultures, the mechanics will vary - slow underground roast/braise.

    All day/overnight....in this case above, probably a couple of days.

    Don't want to skin the pig [as in tossing it]! In many circles, the skin can be the most favoured part of the swine - including ears, snout, hooves, etc.

    Also, skinning aids in faster bacteria growth.

    Didn't know that, but it makes sense. I figure after years of doing this sort of thing the locals know what they're doing when handling four legged produce.

    I reckon The Gent would have a counter comment relative to Thai animal husbandry knowledge and expertise?
