    A nice Tuna Salad

    I had the great pleasure of having Loy Toy around at my place this evening.

    Nothing really planned other than for he & I to meet up at a pub nearby my place.

    Have to say he's a real gentleman and accepted my offer to come have a beer at my house.

    Small world.......He knows people that are friends of friends of mine!

    Anyhow, He made a grand impression on my wife and neighbor..........as I said a true Gentleman.

    I had this tuna salad I had made & it kind of hit the spot with him.

    So, here ya go Buddy......

    It ain't perfect........just what I had laying around today (It was fresh...I had just made it a couple hours before you devoured it).

    1 can tuna fish in spring water
    3 boiled eggs
    2 chopped Vlassic pickles
    1/2 medium sized chopped onion
    around 2 big spoonfuls of mayonnaise
    add salt and black pepper to taste

    Loy Toy looked a lot like this as he scarfed down a bowl of it.

    I must agree that I thought it was rather bland......To each his own though.

    Like I say, I just tossed it together. It just happened to be handy when Loy Toy was here.

    I had it nicely chilled and we were spooning it onto some Ritz crackers and it went quite well with our beer.

    He speaks quite highly of several TD members....(SEA Traveler & I used to WORK with not one, but 2 common acquaintances)

    Anyhow,
    Loy Toy is a great guy, and now you all have my tuna recipe. Do with it what you will.

    Hope to meet a few more friends like him in person.

    Probably good friends/good company made my recipe taste all the much better. I'd like to think so.

    I've been looking around for some fresh celery stalk to add to my home made tuna salad. Possibly in Food Land.....

    LT is always has a nice complement about well prepared/tasting foods. Although Mrs LT's desserts and main courses are difficult to beat.

    Good on you mate for thaking the initiative and inviting one of the TDers over for a beer.

    They have it but its very expensive for what is common back home. Try Chinese celery, it is cheap and adds the crunch you are looking for.

    My doc told me to eat more fish to bring my LDL level down so I am eating a lot of tuna and salmon. Any good tuna ideas would be appreciated as I am getting sick of tuna salad.

    Rather than Mayonaise might I suggest a very tasty but simple dressing. 2/3 olive oil, 1/3 white vinegar a teaspoon of salt and a teaspoon black pepper (quanties according to taste)
