^^^Solid effort with the homemade tortilla chips skinns. i had no idea that that was even possible. I had never even made the mental connection between tortillas and tortilla chips.
and don't listen to any of the slide-rule-toting teakdoor cheddar-worrying cheese-bothering pecorino-nazis.
This is the proper way to cut a block of cheese from this evening's batch.
See how the block has a bow shape in it - that is because you slice into the block with the blade pressed parallel to the block and then open the slice out into a narrow wedge shape as you push down.
See the little wedges standing up sideways in the beans.
Flip the block over half way so you don't end up with a triangular block.
Loops, I am getting the sense that Cheesy Beans feature highly in the diet.
I had a step nephew who, as far as i could tell lived on Cheese and Salad Cream sarnies and Cheesy Beans on Toast for most of his first 18 years. He was tipped as a promising Engineer, bought a 4 bed house gets 3 lodgers in and gave up work, died at 33 an alcoholic making is own tipple - be careful with cheesy beans.
I guess the proper cheese slicer is out then...and no strir-frying this time NPT.

Ok...got my "Ranch Style" beans and leftover beef taco mix in the old pot heating up...plus some chili powder, onion powder and garlic pepper seasoning:
add in the homemade salsa and stir together:
wait until hot enough and then added the colby jack and Vermont extra-sharp cheddar cheeses:
heated and stirred some more until all nice and melty:
Lunch/snack served with the homemade tortilla chips and a dollop of sour cream in the middle of the cheezy beanz:

Wife is working this evening, so the grandson and I will have some burritos. Will reheat the bean dip and pour some over the burritos...plus some more chips and bean dip.

Things I learned this time...homemade flour tortilla triangles only need about a minute in the deep-fryer at 350F. Next time I'll try corn tortillas.

This is a fairly radical take on the original theme
I nuke the beans and cheese and give it one stir half way through the 3 minutes so the cheese stays as a seperate but slightly blended through layer
doing in a pot and mixing it homogeneously is really a whole other thing
I am not sure if I have the beans balls to to take it to this radical new level and I think I will stay with my microwave magic
but anyway, thanks for the re-imagined beans
also the sour cream is better if it is cold so you get that temperature fusion on your tongue

Yes, pretty much the same I'd say though I'm no aficionado. It's like pate. The gf likes it on french bread with all her style fixings like cucumber ect. It like smoked chub used to be the cheep go to food for the average workers in this area. Now a little roll of Klement's is like 4 to 5 bucks. They didn't sell Usinger's or I would have stepped up to that.
It's like a Bon me sandwich if you add the right stuff. I wanted to try one so bad last time in Laos but didn't really trust the stuff as my constitution was written a little differently than those folks. Next time I'll brush all fears aside and bite right in. The same gal has been doing the same thing for years there so I may survive though have had a few issues with other food in the downtown area there.
First thought on seeing that pic was that you were using Roast spuds to accompany your cowboy style feast. Left over Roast it’s never happen in my house
If the cheese flavor is robust enough, why not try it as a topping ala pie crust, instead of mixing it Looper style.

The makings...minimal effort as is required by blokes cooking. There will now be an interlude whilst i apply sufficient grog to ensure the finale looks like a dogs dinner. The Hobgoblin ain't me usual and is a bit light at 4.2% but is me starter, to be followed by OSH and then A nice Mabel whilst i try to come up with excuses to not go out.

Add meat of unknown origin which is mysteriously attracted to alcohol
And throw on sliced pickled jalapenos in case the chili sauce was not hot enough to ensure when you wake up in the morning you get the proper night before reminder and hey presto a 32p kebab. Got to say i'm not sure what happened on the last piccy - its looks very dark but wasn't
verdict, was pretty good and when you need the fix but can't be fukd to go out and get yerself in the requisite state. The chili was hot and i will get a reminder tomoz.
