    Central World Food Court

    ...recently opened, this food court is a cut above, let's say, that of Tesco and the like...we stopped in before seeing a movie to have the basil chili clam pasta and beef soup over rice: both excellent. B214 with water...this place will be a regular stop due to convenience and (so far) quality food...

    Tom that pasta does look good, but, what in the name of all that's holy possessed you to buy soup with them ball things in; i've never tried them but God....

    ...ignorance is never bliss when cuisine is the issue...rich flavorful broth simmered with fish balls, garlic, kale and who knows what else: ambrosia...

    ...no doubt Thai cooking requires a little palate adjustment: sugar was mixed into my pasta dish...it seemed to enhance flavors, but my grandmother's eyebrows would have hit the ceiling...

    They do like it and i think its getting worse. All the sweet fried food, sickly drinks et al dulls the the taste buds so they end up overdoing it imho, it does have its place though. I've not been to Centun Whirl in a long time, i'll give it a look next time - thanks.

    What kind of clam is this? Salt water or fresh?

    I try to avoid clam dishes in Thailand as they often contains grit from this type of clam.

    I had a friend get a serious case of food poisoning from eating mussels here....it won't be something I'd be ordering.

    It does, but it takes a clever cook to use just enough without creating discernable sweetness. Many Thai cooks use (abuse) sweetness as a main point in their dish, unfortunately.

    Salt. Mrs was talking about them recently but I (sort of) recall she said the name meant weave, referring to the pattern, hoi dta or something. I'll ask her when she comes downstairs. They're fairly common down south here. Nice because the shells are thin. Coincidentally, I saw them on a menu, the Englsih version calling them "patterned shellfish".

    It's a shame, because a pinch of sugar is all it takes, but the temptation to "make it nicer" is great.
    I'm quite passionate about this subject and at the risk of going off topic I want to mention my most favourite dipping sauce which, when made properly, has the perfect balance of sweet, sour, salt, and bitter...(and maybe the chilli/fish sauce gives some umami?), and with all 4 or 5 tastes, none of which dominates, is a taste sensation. Made with shallots, sugar, fish sauce, lime, chilli, and pig or beef bile. The most moorish thing I've ever had (besides Fererer Rocher )
