    Hello, LC's had more than 2 small beers again

    You do realize that Jaybee's bar advertise their specials all the time on the food groups right?. I wouldn't know the place existed otherwise, nor would countless others in Pattaya who like to go out to eat and want to keep track of the options. Jaybee's always gets good reviews, never seen a bad work said about it. Here's the pic from the same ad they run across multiple food groups every Friday:

    Quite the deal for 99 Baht.

    There's other options too, lots of them. Of which you'd know fuck-all about mostly because that would mean accepting that you're pretty much the only one in town with your head up your arse when it come to local knowledge of where to eat.     The other one would have been The Offshore. Fish and chips swimming in oil never tasted so good (after midnight) and it was on the way from Cowboy to the original Lolitas location around the corner. Perfect

    Yeah, I've tried many times. Those rectangular domestic deep fryers just aren't up to the job. You need a good heat reservoir by having many litres of oil or fat. A big 10 or 15 litre pot of oil might do the trick, but it makes for expensive fish'n'chips with so much oil.

    ^I've made fish & chips from scratch and what I learned was it's a lot of work in a hot kitchen for a result that wasn't great.

    When you can get really good ones made for you for under 300 Baht by people who do it for a living, eating out makes a lot of sense.

    You don't need atlantic cod to make fish and chips FFS. (bloody poms)
    Been eating fish and chips all my life and never had fresh atlantic cod.
    And firm fleshed fish will do.
    And you don't need a deep fryer or 15 litres of oil.
    peel and cut the potatoes into whatever thickness chips you want.
    Soak the chips 15 minutes. Meanwhile make a batter. I prefer a fairly thin batter.
    flour water salt and an egg. You can add a splash of beer or some dry yeast or baking soda if you want a thicker finished product.
    I like a thin batter so I don't.
    Scoop the chips out and drain them. Let them sit in a colander or something for a while.
    You want the chips as dry as possible.
    The import market here sells frozen fillets of some kind of fish that works well. You want them defrosted and dry.
    The shape of the wok seems to work well for this and you really don't need a lot of oil.
    Heat the oil until a spot of batter flicked in sizzles on the top.
    The woks not so big so I do the chips and fish separately.
    The chips you can parboil in the oil for 8 minutes at 130 then finish for 4 at 180 or
    just cook at 150 until browning then turn on full for a couple to crisp up.
    The fish dredge in the batter (I skip the dry flour step. Completely unnecessary)
    Then swish into the oil. The heat should be well high at this point. once things have settled down in the wok
    turn the heat to half and let the fish cook until the batter is golden. The fish should be sizzling but not violently. You don't want the heat too high.
    I've ended up with beautiful golden crispy batter and raw fish and burned batter and nicely done fish.
    It seems like a lot of trouble but I enjoy doing it with a beer hand.
    The kids love it. The fish below is small because I cut the fillet small for the kids.

    Use a wok and 1 1/2 to 2 litres oil. (if you seive it afterwards it's perfectly reusable)

    ^I've only ever seen John Dory here once, that was eons ago at Bruno's and it was something like 800 Baht per serve. What they palm off as Dory fish here is actually some sort of farmed Catfish from Vietnam that costs about 230 Baht per ton. It looks like this battered:

    From the Lion Pub. Haven't been back there for a while so I don't know if they're still selling 2nd rate fish at good fish prices.

    ^You can get both here, but no battered (that I've seen). Haddock is another fish that you can get here battered, it's nice.

    Has anyone at TD ever tried Swai for frying? It's here in the US stores and it's cheap. I always go with the cod even though it costs more..

    Have heard bad things about Swai...Farmed Vietnamese catfish or ? It looks like a nice whitefish when its filleted and frozen.

    Retox do a nice haddock on fridays.

    As for cod I was told its not really cod that you get here and I do remember in Penang cod cost a fortune where Dory was the cheaper alternative

    Cod was overfished by Euro fishermen and stocks ran so low haddock was an alternative that was sold to the chippies.
