    Peeling boiled eggs

    Yep straight out of the pan into the glass ,it must be a new idea otherwise it would not have been in the Torygraph ,I tried it this morning with two duck eggs ,worked a treat

    Looked like it took the white with the skin leaving only the yoke, I like the whole lot.

    I tried it this morning with two duck eggs and was left with two whole eggs, not a bit of waste

    I'll give it a go the next time I have a boiled egg,as I only eat fresh eggs I have problems shelling them as the shell sticks to the white of the egg .I've tried cooling the eggs immediately after cooking in ice water to make them easier to peel but without much luck.

    A friend of mine just phoned me who lives in the next village ,he tried this new method and it worked perfect .

    Yep Boloa ,the hand movement is oh so important ,I started practising at the tender age of 13 ,little did I know 60 years down the line it would come in handy for peeling boiled eggs too

    As opposed to ones that have have been hanging around in the heat for a weeks on end before you buy them .In most western countries eggs will have a sell by date on the box,here in Thailand who knows how old the eggs you are buying.That why I buy mine fresh from a local farm and place them in the fridge ASAP.
    One must also remember after eggs are refrigerated, they need to stay that way. A cold egg left out at room temperature can sweat, facilitating the movement of bacteria into the egg and increasing the growth of bacteria. Refrigerated eggs should not be left out more than 2 hours before they are used

    It doesn't work well with soft boiled eggs.

    Another easier way is to crack the egg on it's side and then use your palm to roll it back and forth.
    Also not good for soft boiled...

    I do not think that there is a correct way to peel soft boiled eggs, its like trying to play snooker with a 6 feet length of rope ,but this is not what the thread is about is it

    Eggs-actly wrong. Cracking it on its side is wrong and rolling it is also ineffectual unless the egg was already going to peel easily I have found.

    Here is the secret...

    You simply cool the egg in cold water for 20 minutes and then crack each end of the egg hard (pointy head and fat bottom) so it is well smashed. The shell then peels of much more easily. I only discovered this a year ago after 30 years of struggling with shells sticking to eggs.

    I guarantee success with this amazing technique.

    Where I am located and how far to my next village is totally meaningless , however I will say this, if an egg is the same as it is here in Issan I can guarantee 100% success ,cos after all an egg is an egg wherever your abode is
