Agree there --- they seem to think that bruschetta is just little pieces of seasoned french bread with a bit of tomato on top. No cheese!!

^Not even fresh tomato, when I was there. Kind of a tomato paste concoction. Still a good restaurant though.

I have not had Bruschetta with cheese on it.(or tomato paste either)
here is a good recipe if you are having a Barbie.

Bruschetta is one of the simplest things in the world to make, and can be very satisfying if you have good extravirgin olive oil.
INGREDIENTS:
  • Bread, ideally freshly sliced
  • Garlic
  • Extravirgin Olive oil
  • Salt
  • Beans or tomatoes (optional)
  • Hot coals, if possible
PREPARATION:

You will need 4 six-inch wide slices of Tuscan bread. Toast them, over the coals if possible (though a toaster will work fine if need be) gently rub them with a cut clove of garlic (you don’t want to overwhelm the oil), then drizzle them with good olive oil. zSB(3,3)Season with salt and pepper to taste, cut the slices in half, and serve. Serves 4.

There are lots of variations to bruschetta.
  • One of the tastiest:
After rubbing the slices with the garlic, rub them with a very ripe cut tomato as well (or spread a thin layer of chopped tomatoes seasoned with basil, salt & pepper over the slices). Then sprinkle with olive oil and season. In addition to being a fine appetizer, this is a traditional merenda, or afternoon snack.

^ not the ones I know anyway.
Chopped tomatoes, garlic, parsley, salt & good olive oil.

But it certainly ain't tomato paste with some dried herbs mixed in.

Well we nipped down there again a couple of days ago, got to feel sorry for the old guy as he has a great successful restaurant, and the road outside his place has been a dirt track for the past year or so.

Anyway this time I was adventurous and actually ate stuff that I normally wouldn't think to eat, mine was the chicken in tomato sauce, probably boiled or steamed as it was so tender.

A plate of green beans, I tried them but I don't really eat vegetables as they are pretty bland to my mind, and yes, they were pretty bland, but if you eat vegetables they may have classed as world class veg for all I know

Italian sausage and mash, that was pretty damn good.

I really don't think I have ever eaten sardines before, I buy the tins for my dogs sometimes as a treat as they quite like them, but these make great beer food, covered in vinegar and salt, damn, they were good.

Try the calamari & shrimp , really excellent.

The bolangse sauce is some of the best I have ever had.

The guy who runs/owns the place is a grumpy old fart but he sure has a million dollar a year business there.

Sorry, DD, but I hope the food tastes better than it looks. It really doesn't look very appetising or authentic at all.

That is part of this guys success I think. he gives fok all about presentation of his food or restaurant or even himself for those of us who eat there and have seen the guy.

Food is just like a classic home cooked meal and the local Eye Talin community always seems to be dining in there whenever I go.

Well it was back there for lunch today as I was passing, the prices are still the same but he has started doing the place up, his old tatty ceiling has been ripped out and he has put in a nice ceiling with nice lights and all that sort of stuff.

My lunch with a beer 125baht, can't be bad
