    Borey is a sensitive guy. Extremely sensitive to the chemicals found in much of the food in Western style supermarkets. Borey does go into Lotus for staples such as bacon, canned corn, and bad cheese. Most everything else he gets from the local farmers or at the district market.

    Yes, it took Borey years of negative personal experiences to come to this realization. Borey can understand why those who don't get an immediate reaction may find it hard to believe. And with some 300 synthetic chemical compounds (according to the EU) being added to our food supply, it is very difficult to pinpoint a specific cause and effect. So, Borey does his best to avoid all of them.

    This was actually this morning's breakfast. But it was mostly left overs from last night's dinner.




    From top of picture down:


    Steamed vegetables, beef and a fish.


    Sticky rice.


    Beef larb ลาบเนื้อ.


    A hot dipping sauce.


    Fresh pickled phak sian ผักเสี้ยนผี (Cleome gynandra, Spider Flower).

    Oxtail stew (gaeng hang khwai) หางควาย with root vegetables. This is not a Thai recipe, but rather a recipe from the island of Java, sop buntut. When Borey started shopping in the district market, he noticed some really fine tail. Unable to resist, Borey procured a piece. Borey regularly made tail back in the old country, but figured that the locals would not share his enthusiam for the Northern European dish. So, to make it more acceptable to them, Borey spent hours on the computer researching recipes, until he found this one. It's not spicy at all, but they still all eat it up.

    No, got it from the district market. As you probably know, in the village about the only way to get beef is when someone's old buffalo dies. Then, typically, the owner goes around the village selling shares at 1000 baht each, and the butcher cuts up the buffalo and distributes assorted cuts to each share holder. No specifying a specific cut, although in Borey's experience all the cuts are tough and dry (no fat).

    Except last week a small calf died, and the neighbour scored a bit of it. Melt-in-your-mouth tender. Borey doesn't dwell on the cause of death.

    Thai food - bring it on!
    Haven't had a real meal for 5-6 years (throat cancer). 2015 is MY YEAR!
    Will not be able to eat spicy food but all else will be OK.
    You don't miss something until you have not got it. Thai food meets this criteria.
    Thai food, Isaan food - I wish to be a "fat prick"!

    This apparently is in response to Borey's saying on the one hand that he tries to avoid chemical additives in foods, and on the other saying that he buys bacon at Lotus. It is a reasonable response. This is his justification for still eating bacon:

    The preservative in question, sodium nitrite, has been used to preserve meats for about 100 years. Borey has been consuming those meats for over 60 years. No relative of Borey's nor anyone Borey knows has ever had pancreatic cancer (which the quoted story indicates may result from eating those processed meats). While Borey does have strong adverse reaction from ingesting some chemical preservatives, he has never had a reaction from eating bacon. And on top of that, Borey likes bacon.

    The article quoted above is one of those that simply confuses the issue of the effects of chemicals in the food. The author is apparently more interested in selling his book than in accuracy. The study he refers to does not blame sodium nitrite for the increase in pancreatic cancer among those who eat processed meats. The author pulls that correlation out of his butt. The author states that the preservative sodium nitrite, is "added primarily as a color fixer that turns meats a reddish, fresh-looking color", when it, more importantly, in fact inhibits microbial growth and delays rancidity. The author also ignores the studies that show a correlation between pancreatic cancer and diabetes, obesity, cigarette smoking, and alcohol abuse. The author also doesn't want to confuse the issue by noting that pancreatic cancer is regional (highest incidence in the US and lowest in countries like China and Thailand) and that Blacks in the US are much more likely to get the disease than are Whites in the US, while the incidence of the disease among Blacks in Africa is very low.

    The issue of chemical additives in food is extremely complex. Borey doesn't expect any clear answers in his lifetime (which he is shortening with his bacon sandwich).
