You need to remember that the people cooking it think it is perfectly acceptable to clean their arse after having a shit with their hand, wash in cold water (if indeed they bother) with no soap and straight back to preparing your food. They forget that the toilet seat, the bowl they use to scoop water, the handle on the tap that fills the water, the bum gun, the handle to flush, the lock on the door, the door and handle itself, it covered with bad bacteria from shit and the moment they go into the toilet they are a breeding ground for bacteria.
Also, rice, a bigger harbinger of salmonella than chicken when left sitting around warm (not hot) in large quantities for a long time, which they all do.
Their meat is never stored properly, usually comes from a warm air market swarmed by flies and never see s fridge ever.
Their plates, cooking equipment, cuttlery etc never see a dash of washing liquid and are rife with bacteria. If they do, it matters not as their hands are covered in shit anyway when they pile the stuff up, or pick up the plate / carton to hold your food. If they do not use dish detergent, they water bowl they wash in is a serious health hazard and the water quickly becomes a bacteria, shit and piss soup, which when mulitplies considerably in the warm humid air. If they do use detergent, they would only use the cheap stuff which does nothing apart from remove grease.
Cross contamination of raw meats like chicken and fish is standard policy - just the other day in a supermarket a lady packing the good put raw chicken in with salad items and was pissed off when I told her to go and get replacements for all the salad items.
Cross contamination within the kitchen is also a huge problem. If they wear gloves they use the same gloves for everything and think that because they are wearing gloves the do not need to wash them. They will wear the same pair until they fall apart- could be days. They have no nail brushes in Thailand have you noticed? Think how much shit it under the average thai finger nail.
No understanding of critical temperature zones in the kitchen (food stored below 10 degrees of above 70 with nothing in between).
Meat kept in tepid water for hour after hour.
A loathing of discarding anything. Chicken smell rotten and slimy? Ahh stick it in the food with lots of spice to cover it.
On top of this is the menagerie of creatures roaming around their food prep areas that ensure that you are eating human shit with each mouthful whether is be a cockroach, rats and mice pissing all of the place, little lizards, themselves almost always carriers of Salmonella, pissing and shitting everywhere, flies in the million, and even Ants who might be walking across a dog turd on their way to then walk across your chicken.
....oh the list goes on and on and on and on.
So this is why. Some people have iron guts and can get used to it. Others suffer horrendously. I am in the middle. Its not just Thais though. Indians, thais cooking farang food, farangs with no training or understanding or professional kitchen work.
I had a hankering for thai food last night. Within 5 hours I was on the toilet. three shits today already and another in the departure lounge raring to go. Cooking myself again for a while until I forget.
