    Roasting Peanuts

    For years I have seen these piles of dirty peanuts just dug up at the local market and decided to buy some the other day. They are cheap as ever so thought it might make for an easy local snack.

    All the info on the internet says you only need to roast them for about 30 minutes at 175 degrees C. I find it takes well over an hour before the nuts finally get rid of the awful mushy texture. (I don't soak them in saline some do, but rather just wash them in a colander, let them dry, and then put them in the hot oven.) Anyone else out there roasting peanuts care to share their secrets?

    The more common everyday manner [homestyle, not commercial] would be to properly clean said legume - allow to sun dry for a period [up to you]

    Simply wok "roast" them on a low but steady fire, stirring or tossing to insure a thorough cooking process without burning. Add salt/chili flakes/roasted garlic/whatever for taste....or not - just as they are.

    The idea of an oven is humorous, as 99% of Thai households don't have such devices as Farang understands.

    You'll find that the commercial products are ladened with a suspicious soaking process of one type or another - lyme and MSG additives are commonly used in the cooking process, as one can taste it.

    A home made product is much better.

    Hey, that helps. I think if I dry them in the sun for some period, they would start out a lot dryer in the roasting process. Humorous or not, the oven method works very well. You don't have to use cave man techniques just because you live in Thailand you know!
