    Green Mango, That aint ripe

    I don't really like mangos, you know the yellow ones, a sweet, sickly and soggy mess they generally turn out to be, although I do like mango chutney, but that's a different kettle of fish, but what to do with the un ripe dark green ones?

    Now this I do like, not sure if they only do this in Thailand but got a feeling it's probably eaten with similar bits and pieces in other countries that grow mangos, each tree has so many fruits on it and such a long season that they got to get rid of them some way or other, we can only eat so much mango chutney

    So, take some green mangos such as these.



    Wash and peel the skins off your mangos, now slice, easiest is to hit the stone with a big bladed knife and break the mango pieces off, now all you need is some sugar and ground chili powder, with your sliced mango dip into your mixed chili and sugar and eat away, delicious, there are also other dips you can make to go with your un-ripe mangos





    Mango Chutney Recipe

    Ingredients

    1 ripe but firm green mango (450 -500 g)
    1 sticks cinnamon (about 2 inch)
    2 whole cloves
    1 tsp cumin seeds
    1 tsp coriander seeds
    2 cardamom pods, cracked
    1 tsp ginger, grated
    2-3 whole dry red chilies
    1 clove garlic, crushed
    3/4 cup demerara sugar (if you have access to Indian jaggery use 3/4 cup- 1 cup powdered jaggery depending on the sweetness)
    1/2 cup vinegar
    3/4 cup water
    1 tsp salt

    Method:

    Cut the mango into 1 inch cubes and for chunky chutney, keep some pieces about 2 inch. If you are looking for smooth, cut them all in same size.

    Using a piece of thin muslin cloth, tie up the spices into a bundle. Cook the mango, spices (in the muslin cloth), water, ginger and garlic until the mango is tender. Some pieces will disintegrate into the water. Takes about 10 minutes.

    Add the vinegar, sugar, salt and dry chilies. I like to break 1 red chilly into flakes and keep 1 whole. If you want and are feeling adventurous you can go up on the chilies. The sugar requirement may also vary depending on the sweetness of your mango and personal preference. Feel free to reduce or add as per your liking.

    Cook for about 30 -35 minutes until the chutney is thickened. Squeeze every bit you can from the cloth and discard it. Transfer to sterilized jars while still hot. Don’t put the lid, until the chutney cools. It keeps well for 4 weeks in the refrigerator.

    I live in amongst a mango plantation. I used to eat them. Now I just throw the windfalls at cat's heads.

    They're an acquired taste, mind you.. unripe mangoes, not cats. If you haven't adopted a Thai pallet then forget it...

    Used to eat green mango's once in a while when I wuz a kid. Not really a fan. Dipped in some ... was it curry powder? Can't remember. Dipped into something.

    Every bastard and his dog eats green mangoes here , but the recipe for the dip is a little different. Chillie powder , sugar and salt.

    Cant say I really love the stuff.
    More the icky yellow mango mess fella myself.
    Introduced the Gf's family to the delights of passionfruit with icecream last week after watching them stuff themselves with the fruit straight off the vine mixed with salt and sugar.
    Off down the local ma'n'pas but they only had coconut icecream scoops , so the flavour wasnt quite what I expected either.
    Now I can understand y they only stick veggies in their icecream , like corn and beans , they couldnt believe you could mix it with fruit !

    Mamuang Man. Unripe mango, love it, without any dipping, thank you very much.

    Many thai fruits are so sweet that I find them hard to eat.

    Unripe mango reminds me a bit of apples and pears in my country.
    They also make for a good som tum thai.

    The filipinos like em green dipped in a disgusting purple coloured fermented fish paste called Bagoong , watching them eat that shit was enough to give me the heeves , got my revenge on em though when i Australianised this disgusting national pasttime by dipping green mangoes in vegemite , Could never bring myself to eat that other "national delicacy" The Balut though , the work of the devil that shit

    I couldn't do it despite my love of both mangos and veg.....Perhaps after a half slab of Boags...which reminds me of the time I ate a frozen chook at the Brekky Creek in Brissy. (I won it in a footy club raffle).

    They are apparently high in witamins, good for the digestion and good for your heart.

    Ripe ones taste fantastic with a little lime juice over them mixed with parma ham pieces.

    Phone up your mate with the tree in his backyard..or his neighbour's yard. Tell him you're comin' over with an esky and a uteload of mates.
    Arrive.
    Fill the back yard with banana lounges and throw a tarp over the Hills hoist (gotta keep the sun off the kiddies and the esky).
    Drink
    Get the bent wire coathanger thingy on the end of a long piece of electrical conduit and start dropping the fruit from the tree. Any one who drops one as it comes down, must get the next beers.
    Remove skin from mangos and make as much mess as possible eating them. Tell Cheryl to bring the toothpicks and scot towels from the glovebox.
    Drink
    Fire up the barbie.
    Cook lamb chops, steaks, snags and onion rings.
    Get Cheryl to butter the bread and find the big boddle of marta sauce under the seat in the ute.
    Eat meat sangers.
    Talk a load of shit.
    Watch that dickhead Craig get flattened after picking the wrong fellah's woman to crack onto.
    Drink.
    Clean up.
    Thank the host.
    Leave him any unopened beer.
    Bugger of home.
    Go back at 10am the next day to help drink the leftover beer.
    Watch the footy.
    Go home and declare the weekend a success.
    That's how to enjoy mangos and enhance the bonds of friendship.

    I appreciate our antipodean refinement, which crosses the Tasman bilaterally, invested with the spirit of Anzac (BTW The YouTube vid is very poignant)...but dressing up freshly picked mangos with a strip of smoked dead pig is more what I'd expect from someone wearing a cravat and a cardie slung across his shoulders.

    Having said that, I concede it may be more palatable than the aforementioned green mango with vegemite.
