    What a croc!

have to admit it, I am partial to a bit of Crocodile meat, so when I paid my first visit to Makro today and spotted some nice looking Croc Steaks I snapped them up (get the joke? )
I popped it the Fridge as I had already planned tonites culinary delights. My ol' lady came home and popped some bony arsed fish she had just purchased, in the same fridge and hauls out my nice steak.
"Whats this?" I replied its Croc, "whats it for?", Its for eating ya dumb bitch. "Eeeeeeh You eat that?"
This coming from a women who will happily eat a bug thats just crawled off a pile of Buffalo shit. Or will chomp on a chickens foot that has spent its whole existance stomping around in its own droppings.
So she is astounded that I would eat perfectly good fare such as a nice white croc steak.
There can’t be good living where there is not good drinking

Back to the subject at hand...

I haven't cooked croc, only alligator (more than plentiful in southeast U.S. now).

I prefer it cut into small chunks, about 1-1/2", deep fried. Then serve as appetizers with a dijon mustard sauce for dipping. Cold beer.

There will be lots and lots of it served in New Orleans today and tomorrow -- Mardi Gras is in high gear.

Gator meat is expensive. Any time anyone in the U.S. can figure out how to position food as exotic, the price goes up.

Here's a funny story -- before Hurricane Katrina, there was a gator farm about 10 miles from my hometown. They were raised for hides and meat in a low-lying, swampy area enclosed by chainlink fencing. The hurricane surge raised the water level so high, those gators just floated out. I'll bet a few people down the road were rather surprised at the wildlife in their backyards once the floodwaters went down. And that must have been one of the stranger insurance claims -- "lost inventory: 50 alligators."

I like the cat fish here. Back in the US? NO FUCKIN WAY! May as well eat slimy ol' bottom mud, IMO.

    My favorite recipe

Crocodile with Basil and Coconut Cream

500gr crocodile meat, cut into strips
    40ml oil
    100gr onion, finely chopped
    40ml fish sauce
    150ml coconut cream
    10gr brown sugar
    5gr coriander root, chopped
    30gr basil leaves, sliced
    3 red chillies, finely sliced

    • Heat the oil in a stewpot, add onion and chillies.
    • Fry gently until soft, add crocodile and sauté for about 5 minutes.
    • Add fish sauce, coriander root, sugar and basil and cook for about 1 minute.
    • Pour in coconut cream, bring to the boil and remove from heat.
    • Serve garnished with fresh basil.
