    We just got sent some egg poachers from the UK. Makes a nice change from fried.



    Just use a little butter or oil to grease the insides to stop them sticking. In a pan of simmering water for 5 mins, then turn them out.

    My favorite? Probably sunny-side up, and poached.

    I also like the hard boiled.

    Eggs are a good snack and you can add them to a lot of food.

    I used to just eat one or 2 hard boiled eggs as a snack: sprinkle a little salt and pepper on one end of the oval, bit/eat half of it, then sprinkle a little more salt and pepper on it and eat the rest.

    Thai eat lots of eggs, I've only seen them refrigerate hard boiled eggs!

    Yanks like myself always refrigerate eggs and hard boil them to make them last a few days!

    I'm inclined towards the Thai style and after seeing throughout South America they pretty do the same as Thailand.
    The USA is the weirdo when it comes to keeping eggs refrigerated constantly.

    The Phillipinos dont bother with fridges, larders or pantiries.
    They wait for the fucking thing to get half living, Balut err, i had the privilege of sitting in a foodstall in Makati and being offered one and being half pissed i started peeling the shell before realising what was on offer, feathers and all.
    The locals i was with found it very funny.

    Eggs in the west are a processed food. They have been washed of chicken shit which washes off the eggs natural protective coating. In the third world eggs are unwashed and can be sold and stored au naturel. In the west eggs are washed and need to be stored covered hence egg boxes.

    You can always do a quick egg test to see if they are still fresh.

    1. Fill a bowl with cold water and place your first egg inside. If the egg sinks to the bottom, it's fresh. If the egg sinks to the bottom, but stands on its point, it's still good but needs to be used soon. If the egg floats to the top, it needs to be discarded.

    2. Repeat with the rest of the eggs in your carton.

    Since egg shells are porous, overtime the liquid in the egg evaporates and is replaced by outside air. This results in more buoyant eggs.

    Looking at fresh, unwashed, market eggs covered in doodoo sitting in the frig freaks me out. I think everything in there can be contaminated.

    Those little cootie things living on us or our pets don't concern me. They are always there.

    I've had typhoid fever, a kind of salmonella, from eating contaminated chicken. That was a bit of hell always remembered. Whether the bacteria came from the slightly undercooked grilled chicken or the cook, I'll never know, but I am much more careful with chicken now.

    ^ Wiki is sh*tty source of info. I ate eggs sitting on the unrefrigerated shelf at my local Thai shop for ten years. Never a prob. I now buy eggs from a local butcher that still have stuff stuck on the shells. Best eggs here, especially compared to the big supermarket crap.

    I buy organic eggs that have been washed, not factory eggs.

    Eating eggs with chicken poo stuck on them for many years turns your brains into shit. I heard Rush Limbaugh say that.

    I reckon the Thai eggs I bought were real organic. Came from Auntie Gai's coops. The eggs I buy from my local butcher are twice the size of organic shop fodder and are tastier and way cheaper.

    If the eggs dropped out of my own dear chicken's behind, I would not worry about contamination. (Also if I had my own cow I would drink her squeezings without pasteurizing.)


    On reading about eggs, I find it is illegal in the West to sell unwashed eggs in most areas to avoid contamination. They are washed then sprayed with mineral oil to replace the "bloom."

    My Missus reckons that originally the reasoning was that adding/washing with water changes the temperature unnaturally which sets off a reaction which then makes them spoil quickly. Now before anyone says why not let the water reach room temperature - same as the eggs - I have no answer for this Just repeating a response.
